Sweet potatoes and apples Preheat oven to 350. Arrange alternate slices of sweet potato and apple in
a baking dish that has been sprayed with a nonstick cooking spray. Combine
orange juice, water, sugar and spices. Pour mixture evenly over potatoes
and apples. Dot with Sweet potato patties Drain sweet potatoes and mash with a fork, ricer or electric mixer.
Add oil, salt, pepper, nutmeg, and milk, beating until light and
fluffy. Stir in chopped pecans and shape into 8 flat round patties.
