Directions: Marinade - combine the soy sauce, cornstarch, cold water, 1 Tbsp olive oil and 1/4 tsp sugar. set aside.
cut chicken breat into 2 x 1 1/8 inch slices.
pour the marinade over the chicken and let set 30 minutes for 30 minutes, over covered overnight for 8 hours.
cut the broccoli florets into bite size pieces.
heat over medium heat 2 tbsp olive oil, add the chicken and merinade and stir fry for 3 minutes.
remove the chocken with a sloted spoon.
add 2 tbsp olive oil and add garlic, ginger and broccoli stir fry for 1 minute. stir in the water, salt and remaining 1/2 tsp sugar. cover and cook until the broccoli is tender. 2 to 3 minutes. return the chicken and heat through.
