Goat cheese chicken breasts



Ingredients:
1 robert rothschild hot pepper peach preserves
4 soft goat cheese
2 egg
3 bread crumbs
4 Pound(s) chicken breast
417/10000 Ounce(s) salt
Directions: Preheat oven to 375 in a medium sized bowl, mix togehter breadcrumbs, salt and ground black pepper. cut a pocket into each breast, cutting almost to the other side. Stuff each breast pocket with 1 ounce of the goat cheese. Next, in a small bowl crack eggs and immerse each breast with egg entirely, then take the chicken breasts and cover them entirely with the breadcrumb mixture. Be sure both sides are covered completely. Put a few toothpicks into the side of the breasts where the goat cheese is filled to help sucure the opening. In a large skillet, place the breasts over medium to high heat, cooking breasts for at least 5 minutes or until nicely browned. Remove skillet and place the skillet into the oven for 8-12 munutes with the breasts. Take out of oven and plate. Spoon on 1 large teaspoon of warmed Robert Rothschild Hot Pepper Peach Preserves over the chicken!
