Directions: melt butter and clarify it. then cook it slowly until it is a deep golden brown. place asparagus in a 12 inch skillet with enough water to barely cover. gently boil the asparagus uncovered for 5 minutes. drain well. combine the bread cumbs, cilantro, shallots, garlic, salt and pepper. butter a baking dish. arrange the asparagus in alternating rows with the tomato slices. sprinkle the bread crumbs over the top. drizzle with brown butter. broil for 6 minutes.
