Stuffed monster zucchini This is of general interest, so I'll post it. I, too, was recently given a
giant zucchini, big enough to effectively bludgeon someone. (ironically
enough, I got it in a butcher shop my dad dragged me in to.) I sliced it in
half horizontal Zucchini oatmeal cookies Cream margarine with honey. Add egg and beat well. Sift flour with
soda, cinnamon, cloves, nutmeg and salt. Add flour mixture
alternately with zucchini to egg mixture. Stir in oats and dates.
Drop by teaspoons onto greased baking sheets. Bake at 375F for Fruity muffins Preheat the oven to 400F degrees. Place 10 paper muffin cases in a deep muffin pan. Sift the flour and baking powder into a mixing bowl, adding any husks that remain in the sifter. Stir in the sugar and chopped apricots. Preheat oven to 350F. Butter the sides of an 8 x 2-inch cake pan,
line the base with a circle of baking parchment and butter the

with paper baking cups.
Lightly spoon flour into measuring cup; level off. In large bowl, combine
flour sugar, baking powder, baking soda, sage, parsley and cheese, blend
well.

with melted butter or oil. Sift the flour, baking powder and cocoa into a

Mix
bread crumbs, milk and lemon peel together, blend with zucchini. Whip eggs,
add water and spices and whip again. Pour into hot omlet pan greased with
butter/oil. When egg Zucchini montoya Dice and simmer squash in about 1/2 cup water until soft. In a large
skillit, fry beef and sausage until done. Drain excess fat. Mix squash
(including water) with meat. Let cool for at least 5 minutes. Add all
remaining ingredients except for 1/ Chocolate-red chile zucchini cake Preheat oven to 325 degrees. Grease a 9- by 13- by 2-inch pan. Sift
together flour, cocoa, baking soda and salt in a large mixing bowl. Set
aside.
In a separate bowl, cream the butter, vegetable oil and sugar, beating
until the mixture is light Chocolate chip zucchini cake Mix chocolate chips, 2 Tablespoons sugar and brown sugar. Set aside.
Mix remaining ingredients and pour into a greased and floured 9 x 13 inch pan.
Sprinkle chocolate chip mixture over top of cake before baking.
Bake at 350 degrees for 30-40 minutes.
Zucchini brownies Sift together:
Flour, sugar, salt, cocoa, and soda. Set Aside.
Stir together:
Eggs, oil, vanilla, and zucchini.
Add dry ingredients to wet ingredients.
Stir in chocolate chips.
Spread evenly in greased 9x13 pan.
Bake 30 min @ 350 deg.
Allow to cool 5min Apple muffins In a mixing bowl, combine all of the dry ingredients (except granulated sugar). Add the chopped apple and stir to coat with the dry ingredients. Add the remaining ingredients (except granulated sugar) and stir just until moistened.
Spray 12 muffin tin Fruit sweet and sugar free - raisin oat bran muffins Preheat the oven to 375 degrees. Lightly spray the muffin tins with
lecithin spray. Toast the walnuts in the oven for 7-10 minutes, stirring
occasionally. Allow the nuts to cool, then coarsely chop them with a knife
or with a pulsing action in Chocolate-chip banana muffins Preheat oven to 425 . Grease 12 muffin cups. Combine dry ingredients.
Combine bananas, sugar, eggs, oil, and vanilla and stir into dry
ingredients. Stir in chips. Spoon into cups. Bake 18-20 minutes
Notes from original poster: Made these yesterd Buckwheat muffins Mix dry ingredients (except sesame seeds). Add water gradually, mixing
thoroughly to make smooth batter. Ladle into oiled (however you prepare
pans) muffin tins--1/2 full. Sprinkle on seasame seeds. Bake 30-40 minutes
at 400 degrees. Muffins are cri 7-grain corn muffins Mix all ingredients (except for cornmeal) in blender until very smooth.
Mix in cornmeal with a spoon. Fill oiled muffin cups 1/2 full. Bake at
375 F. for 35-45 minutes.
Baked zucchini nicoise Chop the canned tomatoes and drain any juice. In an oven proof dish, toss
the zucchini, tomatoes, onion, and garlic, and drizzle the oil over the
top.
Arrange the black olives on top of the vegetables, then sprinkle with the

Toast coconut in no stick frying pan over med-hi heat until toasted and brown, stirring often. Set aside.
Combine all dr Bacon and onion muffins Fry bacon until crisp in skillet. Remove with slotted spoon and drain on
paper towels.
Saute onion in 1 T bacon drippings until tender (do not brown). Set aside
to cool.
Sift together flour, baking powder, baking soda and salt in large mixing

Comb Bacon cheese muffins Cook bacon- drain but reserve dripping, if necessary add veg oil to measure
1/3 c total. In a small bowl combine dripping/oil, egg and milk- set
aside. Crumble bacon, set aside. In a large bowl, combine dry ingredients,
make a well in center. Add Zucchini drop cookies Mix together zucchini, soda, sugar, butter, and beaten egg. Sift in
flour, cinnamon, cloves, and salt. Stir to blend. Stir in raisins
and nuts and drop batter by the teaspoonful on greased cookie sheet.
Bake in preheated 375F oven 12-15 minutes. Makes Slimmer pear and ginger muffins In large bowl, combine whole wheat and all purpose flours, rolled oats, sugar, baking powder and soda, ginger salt and raisins. In separate bowl, beat egg. Stir in e. milk, pear, oil and lemon rind. Pour over dry ingredients stirring until just moistened. Zucchini-and-basil filo PREHEAT OVEN TO 350F. Remove filo pastry from freezer and let it come
to room temperature while you prepare the filling. Unfold the dough,
and cut the stack of sheets in two. If you are making just one
recipe, refold half the dough, and wrap it in Apple and carrot muffins Mix wet ingredients, and add dry. Stir until everything is moistened
(these make a very wet batter). Spray a muffin pan with Pam, and fill the
muffin cups 3/4 full. Bake at 400 for 15-17 minutes, until a tootpick comes
out dry.
Banana crunch muffins In a small bowl mix all dry ingredients together. In a larger bowl mix all wet ingredients together. Add dry ingredients to wet ingredients. Bake for 20-25 minutes (or until toothpick comes out clean) in a 350 degree oven. This recipe makes about 10 muf Zucchini blossoms, cretan style Soak the stems in cold water overnight, without soaking the blossoms. The
following day, wash and drain on a towel. Cut off and discard the stems
without breaking the blossoms, and set the blossoms aside while you make
the filling. Heat the oil Apple butter muffins Combine flour, sugar, baking powder, spices and salt, mix well. Make a well in the center. Combine egg, milk and oil, add all at once to flour mixture. Stir just until the mixture is moistened. Line muffin tins with paper cups. Spoon one rounded tablespoo Blueberry muffins (julie's recipe) Make cinnamon/sugar mixture with 2 T sugar and 1/2 tsp cinnamon. Set aside.
Cream butter and sugar. Sift dry ingredients.
