3 sliced zucchini
1 large, sliced onion
326/625 Pound(s) bisquick baking mix
1/8 Quart(s) vegetable oil
4 large, beaten eggs or egg beaters
163/625 Pound(s) grated parmesan cheese
4 Ounce(s) grated mozzarella cheese
3 parsley, salt and pepper, to taste
Directions: Mix Bisquick, oil, eggs, cheeses, parsley, salt and pepper; fold in zucchini and onions. Place in a greased 13-in. x 9-in. baking dish. Bake at 350° for 45 minutes.
