Directions: QUICK SWEET DOUGH:
Scald milk; stir in sugar, salt and butter. Cool to lukewarm.
Pour warm water into warmed bowl. Sprinkle in yeast and stir
until dissolved. Add lukewarm milk mixture, eggs and 5 cups of
the flour. Mix with dough hooks or by hand until well blended,
about 3 minutes. Add remaining flour 1/2 cup at a time as
needed. Knead until smooth and elastic. Place dough in a
greased bowl, turning to grease top. Cover and let rise in a
warm place free from draft until doubled in size, about 1 hour.
Punch down and divide dough for rolls or coffee cakes as desired.

YUMMY PECAN ROLLS:
Combine brown sugar, syrup, and butter in saucepan and heat until
sugar is dissolved. Bring to a rolling boil for 1 minute. Pour
into two 11" X 7" X 1 1/2" pans. Sprinkle with pecans. On a
lightly floured board divide dough in half. Roll each section
into a 12" X 9" rectangle. Combine cinnamon and sugar together.
Brush dough with butter and sprinkle with cinnamon and sugar
mixture. Roll up tightly, jelly roll style, beginning with long
side. Seal by pinching ends. Cut each roll into 12 1-inch
slices.* Place cut-side down over pecan-syrup mixture. Cover
and allow to rise in a warm place until almost doubled, about 30
minutes. Bake in a preheated 375 degree oven for 25 minutes.
Turn out onto 2 large platters.
* This actually makes 24 rolls. I cut them a lot thinner and
wind up with about 36 to 48 smaller rolls. It depends on what
you serve them with!
