Directions: 1/4 c Sugar
1/3 c Melted butter
2 tb Cocoa
1 c Heavy cream
1/2 c Butter
1 x Fully ripe banana, mashed
1 1/2 c Sifted confectioners' sugar
1/4 c Sliced maraschino cherries
2 x Eggs
Mix together crumbs and melted butter; reserve 2 tablespoons for top. Press
remainder in bottom of 1-quart refrigerator tray. Cream together 1/2 cup
butter and confectioners' sugar. Add eggs, one at a time, beating well
after each. Spread over crumbs. Combine sugar, cocoa, and cream; whip. Fold
in nuts and fruits; pile atop mixture in pan. Sprinkle reserved crumbs
over. Chill 24 hours or freeze. Cut in wedges. Makes 9 to 12 servings.

2. Beat egg whites with cream of tartar, vanilla, and salt until foamy.
3. Gradually beat in 1 cup of sugar until stiff peaks form.
4. Sift 1/4 flour mixture over egg whit Chocolate mint meringue cheesecake Combine crumbs, margarine and sugar; press onto bottom of 9-inch spring-
form pan. Bake at 350 degrees F., 10 minutes.
