Ingredients: 1 Pound(s) Pasta 2 Teaspoon(s) Olive oil 1 large Onion, diced 1 small Green pepper, chopped 2 Cloves garlic, minced 4 large Tomatoes, peeled, seeded 1 Cup(s) Black olives, halved 1 Cup(s) Cooked garbanzo beans 1 Cup(s) Vegetable stock 1/2 Cup(s) Italian flat-leaf parsley 1/4 Cup(s) Fresh basil, chopped 1 Tablespoon(s) Fresh oregano, chopped |
Directions: 1. In a large stock pot or wok, cook pasta according to package directions.
2. In a hot wok, heat oil, add onions, peppers, and garlic and stir-fry
until soft and golden, about 5 minutes. Add tomatoes, olives, and garbanzos
and stir-fry until heated through, about 4 minutes. Add stock, bring to a
boil, reduce heat, and simmer 2 minutes. Stir in herbs, toss with pasta,
and serve.
Makes 4 servings.
