Directions: Scrub potatoes, place in pot with enough water to cover, boil about 25 minutes until potatoes are cooked but firm. Cool slightly, peel skin when warm enough to handle, cut potatoes into medium-sized wedges. Toss potatoes with celery, garlic, oregano, salt, pepper, and enough olive oil to moisten. Splash with wine vinegar. Let set covered for 15-20 minutes. Serve slightly warm or at room temperature.
