Winter Fruit Compote with Ginger

Ingredients: 2 1/2 Cup(s) Dried cranberries; 2 Cup(s) Fresh orange juice 10 1/2 Ounce(s) Preserved ginger in syrup 3 Cup(s) Seedless green grapes 3 large Pink grapefruit 1/2 Pineapple, peeled, cored 1 large Navel orange, the rind |
Directions: In a bowl let the cranberries soak in the orange juice for 30 minutes, drain them in a sieve set over a bowl, and reserve the juice. Reserve 1 large piece of the preserved ginger and in a blender or food processor puree the remaining ginger with the syrup and the reserved orange juice. In a deep 2-quart glass serving dish arrange half the cranberries, drizzle them with about 1/2 cup of the ginger mixture, and top them with the grapes. Drizzle the grapes with about 1/2 cup of the remaining ginger mixture, top them with the grapefruit, and drizzle the grapefruit with about 1/2 cup of the remaining ginger mixture. Top the grapefruit with the pineapple, drizzle it with the remaining ginger mixture, and arrange the remaining cranberries on top. Arrange the orange sections over the cranberries, chill the compote, covered, for at least 2 hours or overnight, and serve it garnished with the reserved ginger, cut into julienne strips.
Serves 8.

over subSaharan Africa. Fresh ginger makes a spicy drink, cooling in
summer, warming in winter and always refreshing and energizing. Fruit
juices other than the citrus Fruit tart For crust, combine flours and the 1 Tablespoon sugar. Cut in margarine till mixture resembles coarse crumbs. Sprinkle with ice water; toss till crumbly. Form dough into a ball. Press dough into a circle on waxed paper. Cover with another sheet of waxed p Turkey with fruit stuffing Cut 3 parallel, lengthwise, 1-inch deep slits in each turkey breast
half. Place turkey breast halves flat in a buttered roasting pan.
Cut dates in thirds. Cut apricot halves in fourths. Combine dates,

Rainbow fruit compote Over a small bowl peel and section oranges, reserving juice. Stir sugar,
lemon peel, lemon juice, and cinnamon into oranges and reserved juices.
Cover and chill for several hours or overnight.

Run the lentils through your hands to make sure there are no stones or
other foreign bodies in them. Rinse them in two changes of water and put
into a pan. Add onion, salt to taste, and enough water to come about 2

medium-low speed, beat butter & sugar, until light & fluffy. Beat in
egg & molasses. Reduce speed to low, & gradually add flour mixture

Press into a 12-inch round, greased pizza pan.

Summer fruit salad with mint sugar Makes 6 servings. Pulse mint and sugar in a food processor until finely groun d. Sprinke mint sugar over fruit in a large bowl and toss gently to combine. Let stand 5 minutes before serving.
*** Recipe Variation - process 1/4 c sugar with 1 c gresh basil Amaretto fruit dip Place all ingredients in a medium sized bowl and beat with an electric mixer at medium speed until well blended. Serve immediately or cover and chill until ready to use.
