Ingredients: 1 Ounce(s) Wild mushrooms 1 Pint(s) Water 1 Ounce(s) Butter 1 small Onion, thinly sliced 2 Teaspoon(s) Cornflour 2 Tablespoon(s) Madeira 1 Tablespoon(s) Shoyu soy sauce |
Directions: 1. Wash the mushrooms to remove any grit, then place them in the water, bring to the boil and remove from the heat. Leave to soak for 30-60 minutes. Drain, reserving the liquid, and chop coarsely.
2. Meanwhile, melt the butter in a saucepan, add the onion and fry for 10 minutes, letting it brown. Add the mushrooms and simmer for 30 minutes, until tender. Mix the cornflour with the Madeira and shoyu, and add to the mushroom mixture. Bring to the boil to thicken slightly. Season to taste.

Pan roasted halibut with walla walla onions and pea sauce Pan Roasted Halibut with Walla Walla Onions and Pea Sauce
Serves four
4 6-ounce halibut fillets
4 large or 8 small Walla Walla salad onions
2 shallots finely chopped
6 ounces chicken stock
6 ounces shelled English peas
2 Tbsp butter
2 tsp olive oil
2 tsp Duck sauce Combine the preserves, vinegar & ginger & heat to a simmer. Simmer
gently, stirring occasionally, for 5 minutes. Remove from the heat &
stir in the chopped scallions. Will keep refrigerated for 2 weeks or
so.
Long-grain and wild rice mix Mix ingredients and store in an air-tight container.

To prepare, bring 3 1/4 cups water to boil in a medium saucepan. Add
Rice Mix, cover, and simmer for 50 minutes. REmove from heat, and

the remaining bouillon in hot water. Wild rice-turkey salad Cook the rice in the water until tender, about 50 minutes. Cut the
turkey into bite-size pieces. Combine all the ingredients ina bowl
and toss. cover and chill until ready to serve. Sprinkle on the
pecans just before serving.
