Directions: Soak plucked and cleaned goose overnight in well salted water. Rinse and
dry, then stuff with 2 onions and 2 apples, both quartered. Place breast
side up in open roaster pan and cover with 2 strips thick bacon. Brown in
475 degree oven until bacon is crisp. Take all fat from pan and discard.
Remove bacon.
Add to the pan 1 onion, quartered,
1 carrot, quartered, 1 cut up stalk of
celery, 1 bay leaf, 2 or 3 sprigs of parsley, 1/2 teaspoon thyme, 2 cans
consomme with 2 cans water, and 1 cup of dry red wine. Cover the pan and
roast at 375 degrees for 2 to 2-1/2 hours, basting often. Goose should be
done so that meat will readily pull off carcass.
Remove goose from roaster and place on warm platter. Remove and discard
stuffing. Strain the gravy and thicken with 1 tablespoon cornstarch mixed
with 2 tablespoons cold water. Correct seasoning if necessary. Serve with
wild rice.

Put the wild rice in a saucepan. Add th Wild mushroom rissotto #3 1. Pre-heat the oven to 180°C/350°F/Gas Mark 4. Saut‚ the mushrooms in 2
tablespoons of margarine with the crumbled vegetable stock cube. Remove
from the heat and set aside.
2. Place the finely chopped onion in a deep saucepan with Wild mushroom and salsify phyllo purse with tarragon jus In a large saute pan saute sprayed with a non-stick spray, add garlic and shallots and cook for 30 seconds to 1 minute.
Add all the sliced mushrooms and saute for an additional 2 to 3 minutes or until there is no liquid in the bottom of the pan. Deglaze t Wild mushroom fettucine Mushroom Stock:
Place mushrooms, leeks, garlic, thyme, bay leaves, oil, peppercorns and parsley in large pot over med-hi heat, saute until ingredients start to brown. (Do not stir too often to allow ingredients to caramelize on bottom of pot.) When ingred Wild mushroom and pecorino tart Preheat the oven to 200C.

bind with eggs, and use to Wild rice and mushroom soup To prepare the rice, heat the oil in a saucepan over high heat. Add the garlic and shallot and saute 1 minute. Add the rice and saute 1 to 2 minutes. Add the stock and season to taste with salt and pepper. Cover, decrease the heat to medium-low, and simme Sausage and wild rice stuffing Precook Wild Rice. Saute onion in butter, add chopped mushrooms and
sausage and fry until done. Combine Wild Rice, sausage mixture,
parsley, sage, salt and pepper. Ideal for chicken, turkey, duck or
squab.
(To order Wild Rice write: Ray Lein Wild rice-stuffed winter squash Cut squash in half lengthwise and place cut sidedown
in a lightly greased baking dish. Bake at 350 degrees
until just tender. Scoop out seeds and set aside.

Bring large saucepan of water to a boil. Add wild rice and cook until tender, abou Chil-beer brisket of beef over wild rice amadine Place beef brisket, fat side down, in deep roasting pan. Sprinkle brisket
with onion, salt, pepper and garlic powder. Pour chili sauce over
brisket. Cover tightly and cook in slow oven (325 degrees F.) for 3
hours. Pour beer over brisket. Increase ov Wild rice pancakes In a heavy saucepan combine rice, water and salt. Bring to a boil, cover and simmer 45 to 50 minutes, or until tender and water is absorbed; transfer to a large bowl to cool. In a heavy skillet cook carrot, celery, onion, scallion and thyme in butter over Wild mushroom and orzo "risotto" Porcini are available at Italian markets and specialty foods stores.
Rinse mushrooms briefly with cold water. Place in small bowl. Add 1 1/2 cups hot water and let soak until softened, about 30 minutes. Drain mushrooms, reserving soaking liquid. Squeeze m Roasted wild striped bass Preheat oven to 450F . Remove stalks from fennel bulbs; reserve bulbs for
another use. Remove feathery fronds from stalks, and reserve for garnish.
Using a sharp knife, halve stalks lenghtwise. Arrange stalks in bottom
of 9x13 inch baking dish; pour wi Wild rice meat loaf Combine all ingredients in a large bowl, mix well. Firmly press into a greased 9x5x3" loaf pan. Bake, uncovered, at 350 degrees for 70 min. Cover with foil during the last 15 minutes if the top is browning too quickly.
Yield: 4-6 servings.
Wild rice bean salad Cook contents of box according to package directions, cool. Add remaining
ingredients, and toss.

Electronic form Wild mushroom and madeira sauce 1. Wash the mushrooms to remove any grit, then place them in the water, bring to the boil and remove from the heat. Leave to soak for 30-60 minutes. Drain, reserving the liquid, and chop coarsely.
2. Meanwhile, melt the butter in a saucepan, add the onion Wild mushroom and epazote risotto Place the Brown Chicken Stock in a medium pot and bring to a simmer. Heat the butter in a large pot or Dutch oven until it foams. Add the onion, season with 1 teaspoon salt and 1/2 teaspoon pepper, and cook 5 minutes until softened. Add the rice and stir Wild rice turkey stuffing recipe The night before, cook wild rice. Break bread into chunks and saute in oil or margarine (see note). Saute onions and celery. Measure spices. Combine all ingredients in a deep bowl. Mix lightly, for dry stuffing, add little or no liquid, for moist stuffing Wild rice stuffing Rinse the rice in a strainer with cold water and drain. Soak the rice in cold water to cover for at least 4 hours. Drain again.
Toss the apple pieces with the lemon juice to prevent browning. If using fresh corn, cut the kernels off the cobs.
Heat the oil Wild mushroom jus Rinse morels thoroughly and then cover with warm water and allow to soak for at least 30 minutes. Drain, reserving soaking liquid and coarsely chop mushrooms. Strain soaking liquid through cheese cloth or a coffee filter to remove any sand or grit. Reserv Wild mushroom sauce #2 In a saute pan heat the butter and olive oil. Add the shallots and cook
until softened. Mix in mushrooms, garlic and salt and pepper. Cook for 5 to
7 minutes or until firm. Add Madeira and reduce for 1 minute. Stir in
demiglace. Bring to a boil an Wild mushroom goulash Sweat together the olive oil, garlic and shallots in a frying pan for 2 minutes. Stir in the wild mushrooms adding the firmer varieties first. Saut‚ over a high heat until the mushrooms start to go soft.
Add the tomato concasse‚, celeriac leaves, salt, pe Asparagus & morels in wild mushroom vinaigrette Trim and blanch asparagus until tender and stop the cooking by immersing
in cold water. Drain and reserve. Soak porcini in stock or water. Bring
to a boil and reduce volume to 1/4 cup. Strain. In blender, combine
balsamic vinegar and the mushro Wild fire bananas (thunder bay grille) 1. Heat 1 oz butter.
2. Saute banana with brown sugar.
3. Add cinnamon to pan.
4. Add banana liquor.
5. Then add white rum to flambe.
6. Serve over ice cream.

Wild mushroom, asparagus and potato symphony 1. Cook and refresh asparagus and parsley.
2. Warm the stock, add mushrooms and new potatoes.
3. Add a dash of cream and whisk in butter.
4. Reheat asparagus in broth, add parsley, season and adjust with lemon juice.
Wild mushroom and fontina pizza Pre-heat the oven to 400F/200C. Cut the foccacia in half horizontally. Brush the cut surface with half the olive oil.
Bake the bread cut side up on a baking sheet for 8 to 10 minutes, or until lightly toasted.
Meanwhile, heat the remaining olive oil in a Acorn squash with wild mushroom-cranberry stuffing Preheat oven to 425F. Place squash cut side down in 8x8x2-inch glass
baking dish. Cover dish tightly with plastic wrap. Microwave on high 10
minutes. Pierce plastic to let steam escape. Uncover and turn squash halves
cut side up. Season cavities w Wild mushroom and barley risotto in parmesan baskets Make one Parmesan cheese basket at a time. Preheat the grill.
Sprinkle one quarter of the polenta in a fine, even layer over the bottom of a non-stick pan. Cover with one quarter of the Parmesan cheese. Cook over a high heat for 2 minutes, then place unde Wild rice and sweet potatoes I cook them together in the rice cooker with equal amounts of water.
Fill into plastic lunch box. Mix for cooking. Nuke for 10 minutes on high.
Note: This can also be made using a pre-cooked sweet potato. Then the nuke time is reduced to 3 minutes f Wild rice-stuffed squash 1/2 c Wild Rice, cooked
1 ts Orange Rind, grated
1/2 c Walnuts, chopped
