Directions: 1. Make batter the night before you serve the waffles, but do not add eggs.
2. Combine together the three flours, yeast and salt in a large bowl.
3. In another bowl blend together the milk, melted butter and honey until smooth.
4. Remove lumps. Pour liquid into the dry ingredients and mix thoroughly.
5. Cover with plastic wrap and refrigerate overnight.

Barley-amaranth waffles Mix liquids and dry ingredients separately, then beat together with a hand
mixer. Pour onto hot, non-stick surface griddle. Thin batter with
additional water if needed. Makes four waffles. May be used for pancakes
also.

All grain porter Use Papazian's temperature-controlled mash procedure. Sparge and boil. This
recipes is based on Papazian's "Silver Dollar Porter." I suspect the
difference in quality between this batch and an extract batch is going
to be Sourdough sams Sift dry ingredients, stir into liquid, roll out and cut with regular donut cutter. Then heat some oil in a deep fryer to 390 degrees F and fry. Makes about 17 Doughnuts with holes. Just before serving
dust with powdered or cinnamon sugar.

finely. Mash in at 130 degrees. Let rest 20 minutes or so. Mash at 150

If usin Tostada waffles Waffles: Preheat waffle maker.Place all ingredients into Osterizer- blender
container.Cover;process at a medium speed until dry ingredients are
moistened.Do not over blend.Pour 1/2 cup batter over center of grids.Close

Whole grain flour mix For quick breads, cookies, muffins, and cakes. Use when recipes call for whole-grain or whole wheat pastry flour.
Whole grain tabbouleh In large bowl, combine grains, tomatoes, cucumber, parsley, onion and mint. Drizzle oil and 3 tablespoons lemon juice over the mixture while you stir. Add salt, pepper and additional lemon juice if necessary to give salad a nice puckery edge.
Per serving Sourdough whole wheat bread with cheddar cheese 1. Add all ingredients except Cheddar cheese in the order suggested by your bread machine manual and process on the basic bread cycle according to the manufacturer's instructions.

This is a combination of sourdough and whole wheat, enhanced with the

batter sit 2 hours at room temperature or refrigerate overnight. This makes
the waffles more tender. Bake in a waffle iron following manufacturer's

Whole-grain fried rice Heat a wok or large cast-iron skillet over high heat until it smokes, 2 to 3 minutes. Add 1 tablespoon of peanut oil.
