White Chocolate Creme Brulee



Ingredients:
2 whipping cream
5 yolks of egg
163/625 Pound(s) sugar
417/10000 Ounce(s) vanilla extract
3 finely chopped white chocolate chips
Directions: Preheat oven to 300 degrees. Whisk egg yolks and .25 cup sugar in a medium bowl. Bring cream and remaining .25 cup sugar to simmer in a medium saucepan, reduce heat to low. Gradually add chopped chocolate to cream mixture and whisk until smooth. Gradually add chocolate mixture to yolk mixture, whisk and add vanilla. Divide mixture into four ramekins and place in baking pan. Fill pan with water about half way up side of ramekins. Bake 50-60 minutes, until mixture is set. Remove ramekins and cool. Cover and chill overnight. Sprinkle .5 T sugar over each ramekin and caramelize with kitchen torch. Can serve hot or cold.
