Directions: Heat sugar, corn syrup and vanilla bean seeds (not vanilla extract if using) in heavy-bottomed saucepan over medium heat until sugar has dissolved and is caramelized to a rust color, about 10 minutes. As soon as sugar caramelizes, remove from heat and add half-and-half and vanilla extract if using, stirring until well combined. Be careful because mixture will bubble up fiercely. Return to medium heat and stir until mixture is smooth. Whisk in white chocolate until horoughly incorporated. Serve warm or at room temperature. Yields 2 cups.

Stirred custard sauce In a 1-cup measure stir together egg yolk, light cream, sugar and salt.
Micro-cook, uncovered, on 50% power for 1 1/2 to 2 minutes or till mixture
is thickens slightly, stirring every 30 seconds. Place the 1-cup measure
in a bowl of ice water and stir eg Whisky sauce #2 Whisk egg yolks, crŠme fraîche, butter, whisky, fish stock over low heat in pan.
Whisk until sauce is thick enough to coat spoon back, about 5 minutes.
(Note: sauce will curdle if it gets too hot.)
Take from heat, season with salt and cayenne pepper.
