Ingredients: 1 1/2 Cup(s) Sun-dried tomatoes 1 Tablespoon(s) Olive oil 1 large Yellow onion, diced 3 Cloves garlic, minced 3 Can(s) 15 oz cannellini beans 1/4 Cup(s) Water 1/2 Teaspoon(s) Ground sage 1/2 Teaspoon(s) Salt 1/2 Teaspoon(s) Black pepper 1/4 Teaspoon(s) Dried red pepper flakes 1/3 Cup(s) Fresh basil, chopped |
Directions: In small bowl, soak tomatoes in enough warm water to cover until soft, about 1 hour. Drain, coarsely chop.
In saucepan, heat oil over medium-high heat. Add onion and garlic, cook, stirring, until onion is soft and translucent, about 4 minutes. Add beans, tomatoes, water, sage, salt, black pepper and red pepper flakes, cook for 10-15 minutes. Stir in basil, remove from heat. Keep warm until ready to serve.
