Red potato summer salad COOK potatoes in boiling water 10 to 12 min. or until fork tender. Drain.
TOSS potatoes, onion, tomatoes, bacon bits
and basil in large bowl.
MIX remaining ingredients. Pour over potato mixture; toss lightly. Refrigerate until ready to serve.
**Can also a Basil tortellini salad Cook pasta according to package directions. Drain pasta. Rinse with cold water; drain again. In a large mixing bowl combine pasta, sweet pepper, broccoli, and carrot. For dressing, in a small bowl stir together the mayonnaise, parmesan cheese, basil, milk Ritzy beef salad Toss together lightly in a bowl the beef, onions, pickles, and chives. In
a small mixing bowl combine mustard, vinegar, oil, and salt and pepper.
Mix well, then toss with beef mixture. Refrigerate until ready to serve.
Serve on bed of lettuce with Lemon couscous salad -Bringer the water and lemon juice to a boil, add the couscous.
-Cover and remove from heat.
-Allow to steep for 5 minutes.

Combine mayonnaise, sugar and vinegar; mix until smooth.
In a large bowl, combine broccoli, cauliflower, bacon and onion.

cups). Place chicken breasts, fennel, red peppers, tomato and olives in

Anne's summer salad I used vegetables on hand. Other in-season vegetables (ie. beans) could be
used. As well, feta cheese or mozzarella cheese could be added. EGGPLANT &
PEPPERS: Peel, slice eggplants. Place in colander and salt lightly. Let
stand 1/2 hour. Prehe Orange onion salad Completely dissolve gelatin in boiling water. Add vinegar and pepper.
Combine cold water and enough ice cubes to measure 1 1/4 cups. Add to
gelatin; stir until slightly thickened. Remove any unmelted ice. Add
oranges, celery and onion. Spo Thai-style tomato and shrimp salad Cook shrimp in a 4-quart saucepan of boiling salted water until just cooked
through, 1 to 2 minutes, then drain in a colander and cool.
Cut peel and white pith from limes with a sharp knife and discard. Cut lime
