Ingredients: 1 unpeeled garlic bulb 2 8-oz. rounds camembert cheese 2 sprigs fresh rosemary |
Directions: Heat oven to 400 degrees. Wrap garlic in heavy-duty foil; bake 20-30 minutes or until cloves are soft but not mushy. When cool, peel; cut each clove into 1/4-inch slices.
Meanwhile, line baking sheet with parchment or foil. Carefully slice 1/4 inch from top of each cheese round, keeping slices in one piece. (For ease in cutting, coat knife with nonstick cooking spray.)
With small sharp knife, make slits in cheese at 1/2-inch intervals. Insert 1 roasted garlic slice and 2 or 3 rosemary leaves into each slit. (Leftover roasted garlic can be covered and refrigerated for another use.) Place reserved cheese tops over stuffed cheese. Place on baking sheet. (Cheese can be made to this point up to 8 hours ahead. Cover and refrigerate.)
Bake 8-12 minutes or until is cheese is melted.* Place cheese on serving platter; remove cheese tops. Cheese will thicken as it cools but will remain spreadable. Spread cheese on thin slices of baguette.
*If desired, bake one round of cheese at a time so you can bring out warm, melted cheese halfway through the party.

Corn fritters with arugula and warm tomato salad Prepare tomatoes:
Cook white and pale green scallions in oil in a 10- to 12-inch nonstick
skillet over moderate heat, stirring, until softened, 1 to 2 minutes. Add
tomatoes, salt, and pepper and cook, stirring, until tomatoes begin to
soften, 3 to 5 minut Stuffed chinese cabbage 1. Mix feta cheese and cream cheese in a processor until smooth paste. Add the cubed peppers, olives, and mix well.
2. Cut the chinese cabbage lenghtwise into 2 equal parts. Place with the cut side down. Carefully lift each leaf and spoon the stuffing.
