Walnut Cake



Ingredients:
200 butter - cooking
100 milk
200 walnuts
560 sugar - caster
250 flour - self raising
30 sugar - vanilla
7 eggs
2 cocoa
200 chocolate - cooking
Directions: BASE: 1) Mix the EGG YOLKS with 350 grams of CASTER SUGAR and 15 grams of VANILLA SUGAR. 2) Add 2 Tablespoons of COCOA and the FLOUR to the mixture. 3) Beat the EGG WHITES and gently mix into the mixture. 5) Bake at 170 degrees in a preheated oven for 45 minutes. 6) Slice into three layers when cool. FILLING: 1) Save some nice WALNUTS for decoration and grate the rest. 2) Mix the grated WALNUTS, MILK, 125 grams of BUTTER, 200 grams of CASTER SUGAR and the remainder of the VANILLA SUGAR. 3) Add RUM or extra MILK if desired. 4) Split the mixture into half and put between the base slices. TOPPING: 1) Melt the CHOCOLATE in a bowl over a simmering pot. 2) Add the remainder of the BUTTER when the CHOCOLATE has half melted. 3) Add the remainder of the CASTER SUGAR when the CHOCOLATE has nearly completely melted. 4) Cover the top and sides of the cake with the topping and decorate with WALNUTS.
