WESTERN BEANS



Ingredients:
4 Bacon strips; diced
1 large Onion; chopped
1/3 Cup(s) Lentils; dry
1 1/3 Cup(s) (1 can) Chick Peas **
2 Tablespoon(s) Red pepper flakes, dried
3/4 Teaspoon(s) Red lentils:* can use others these cook the quicker
1 Teaspoon(s) Cumin, ground
1 Bay leaf
1 Can(s) Tomatoes, whole (16 oz) with liquid, chopped
1 Can(s) Pinto beans; drained (15 oz)
1 Can(s) Kidney beans; drained (16oz)
Directions: Lightly fry bacon in a heavy 3-qt. saucepan. Add onion; cook until transparent. Stir in remaining ingredients. Cook over medium heat for 45 minutes or until lentils are tender, stirring once or twice. Remove bay leaf before serving.
