Directions: 1. Scrub potatoes; cut crosswise into 1/4 in. slices. Place in 1 1/2 qt.
microwave safe casserole. Add water. Cover with lid. Microwave on high for
9-10 min. or until potatoes are tender; stirring once. Drain and cool.
2. Add onions, olives, cucumber, tomato, dressing and parsley. Mix lightly
to coat evenly. Refrigerate until chilled. Stir before serving.

Rice, orange and pecan salad Toss all ingredients together. Serve at room temperature.
Royal citrus salad Place jello in large bowl.
Heat 2 cups water to boiling. Pour water over jello and stir until well

Picante potato salad Combine potatoes, corn , pepper, and onions in medium bowl. Combine picante
sauce,oil, vinegar, cumin and salt; mix well. Gently toss with potato
mixture; chill. Sprinkle with cilantro,and serve with additional picante
sauce.
Orange-cashew chicken salad Peel and separate orange into sections; cut each section in half. In
large bowl, combine orange, chicken, pea pods, red pepper and onion
rings. In small bowl combine Pace Picante Sauce, marmalade, soy sauce
and ginger; mix well. Toss with chicken mixtur 10-minute taco salad In a saucepan or microwave-safe bowl; heat the beans. Place corn chips on a large platter. Top with beans, cheese, lettuce, tomato, salsa, onion, olives, and sour cream. Serve immediately.
Endive/watercress salad Combine walnut oil, rice vinegar, walnuts, chives, Worcestershire sauce,
salt, and pepper in a small bowl and blend well.
Wash the endive and watercress and pat dry with a paper towel. Arrange

Italian sausage (sweet or hot) pper
Add 2 tsp crushed red peppers for HOT sausage. Combine all ingredients,
mix well and stuff into hog casing or make patties.
Crunchy chinese chicken salad Combine ingredients for dressing to dissolve sugar.
Toss all ingredients, including the dressing together.
Adjust dressing amount to taste and wetness.
Chopstix glass noodle salad Soak bean threads or rice sticks in hot water until soft, about 30 minutes. Drain thoroughly and cut into 4-inch lengths.
Snap off stems of snowpeas and discard. Blanch snowpeas for 5 seconds in
in 2 quarts boiling water. Immediately transfer snowpea Orange jello salad 1. In a large bowl, combine water and jello. Stir till dissolved.
