First make the parnsip puree: Boil the chopped parsnips until totally soft,
strain them through a colander and press to remove any excess water. Heat

In a small bowl combine the turkey, chopped onion, and egg white. Take
about 1 Tbls of the mixture and form into 1-inch balls. Set aside. In a

Venison medallions with green peppercorns The venison should be cut into medallions of 3 to 4 ounces, 1/2-inch thick
and 3 inches across. Have all ingredients at the ready as this is a very
quickly cooked saute method and the venison will over cook very quickly.
Heat the olive oil and butte Venison stroganoff 1) Combine the flour, salt, and pepper and coat the steak with it, then pound it into the steak and cut it in to 1" x 1?" strips...
2) In a skillet, brown onions slightly in butter, then add the venison strips, cooking `til brown on both sides, Albóndigas (meatballs) Mix pork, beef, egg, rice, 1/2 of onion, and tomio together; make into small balls. Bring water to boil and add balls; simmer at low boil for 1 hour. Add tomato, garlic, chili, and rest of chopped onion; let simmer 35 minutes. Add yerba buena and simmer 1 Taco meatballs Mix all but last two ingredients. (I puree vegetables in blender
rather than chopping.) Form meat balls and place in 2- 1/2 qt. dish.
Bake at 350 degrees for 30 minutes. While baking, heat taco sauce and

Venison scallops with caramelized shallots Pull the grapefruit apart into segments. Using the tip of a small, sharp
knife, loosen the white membrane surrounding each segment and pull it away,
trying not to pierce any of the little juice pods. Break up the segments
into juice pods and set the Turkey cocktail meatballs Mix all of the meatball ingredients together and roll into bitesized balls.
Place meatballs on top of a broiler pan so any fat will fall through. Bake
at 375 degrees F. for about 15-20 minutes. Mix spicy sauce ingredients as a
dip for meatballs. Yields Swedish meatballs Mix bread crumbs and milk. Let it swell for about 10 minutes. Mince the onion and fry it until soft. Mix all the ingredients. Form into small balls with your hands. This is easier to do with wet hands. The size of the balls can vary a little, but a cher Porcupine meatballs Mix together well; form into balls. Place into skillet and pour enough tomato juice over the meatballs to cover them halfway. Cover with lid and cook over medium heat for about an hour. Turn meatballs occasionally so they won't stick. seasoning and 2 tablespoons of mushroom liquid. Put in a shallow pan. Mix
Bisquick mix, remaining mushroom liquid and poultry seasoning to form a
soft dough. Roll onto a sheet 12 x Baked rigatoni and meatballs Meatballs: In bowl, beat egg lightly; mix in onion, crumbs, garlic,
Parmesan, oregano, salt and pepper. Mix in turkey. Shape heaping

skillet over medium heat, brown meatballs, drain. Place in a 2 1/2-quart
baking dish. Combine sauce ingredients. Pour over meatballs. Bake,
uncovered, at 350 F 50 - 60 minu Sweet & sour meatballs (chat) Mix turkey mince with breadcrumbs, chopped onion, Chinese Five Spice and
seasoning. Make into 16 balls.
Heat oil in a pan, then add onion and saute until starting to soften. Stir
in carrots and green pepper, and cook for 2 minutes.
Add stock, ketchup, dem Giambrone meatballs 1. Place all ingredients in a bowl, and mix thoroughly with your hands until consistency is smooth.
2. Roll into balls about 1 inch in diameter.

remaining ingredients together and shape into 1 1/2-inch meatballs.
Heat sauce and meatballs to boiling; then reduce the heat. Cover and

To make the sauce, wrap the juniper berries in a kitchen towel and crush
them using a heavy skillet or mallet. Remove them from the Oven meatballs In a large mixing bowl combine beaten eggs, milk, bread crumbs, chopped onion, garlic and salt. Add meat and mix well. Shape into 6 dozen 1-inch balls. Place half of the meatballs in a 15x10 inch baking pan. Bake at 375A°F for 25-30 minutes. Remove f Venison chili ala fred 1) Combine the venison, onions, salt and pepper, and brown in a skillet, stirring `til crumbley.
2) Add the remaining ingredients, and simmer for 45 min or `til it is of the desired consistancy.
Venison steaks with mushroom game sauce SAUCE: This sauce is excellent for furred game, especially if the meat has not
been marinated. It is very much in the traditional European Hunter's
Style, which uses juniper berries and pickles. It was developed through the
sixteenth and seven Kofta nakhod (meatballs and chick-pea) 1. Drain chick-peas in a colander, then grind them rather fine in a
processor. Mix everything together except water.
2. To prepare meatballs: Moisten hands w/cold water and prepare meat
& chick-peas balls 1-1/2 inches in diameter. Put the Baked italian-style meatballs PREHEAT oven to 400°F. Mix all ingredients until well blended.
SHAPE into 24 meatballs, using about 1/4 cup of the meat mixture for each meatball. Place in single layer in foil-lined 15x10x1-inch baking pans.
BAKE 20 min. or until cooked through.
Meatballs in chile sauce * Corn Tortillas should be 6 inches in diameter and should be cut
into
small pieces.

Knead together the beef, onion, pepper, garlic and salt and pepper. Let
stand 30 minutes to blend flavors. Form into 16 Venison steaks with compound cranberry butter Mix together the butter and cranberries. Place on a sheet of cling film and
roll into a 'sausage' shape. Chill until firm.
Brush the venison steaks with olive oil and grill following pack
instructions.
Serve immediately topped with slice Venison tenderloins Slice deer tenderloins (no fat) about 1/4 inch. Place in zip-lock bag with marinate.
Marinate: Marinate at least overnight. Two, three days won't hurt.
Place on smoker (offset heat) at 170 degrees for 3 to 4 hours (can be done

Add onion, green pepper, and garlic. Cook for five minutes. Add remaining ingredients except kidney beans. cook about two hours until tender. Add beans last 15 minutes.
