Directions: Preheat oven to 350 degreees. Grease a 5" x 9" loaf pan with butter. Press sugar into bottom of pan. Spread ketchup over sugar and set pan aside.
Put ground beef, onions, cracker crumbs, salt, pepper, and ginger into a large bowl and mix together. Beat eggs and milk together with a fork in a medium bowl, add to meat mixture, and mix with your hands until just combined. Shape meat mixture into a loaf, put into prepared pan, then press gently to fill pan.
Bake meat loaf until well browned on top, about 1 hour. Set aside to let rest until most of the pan juices have been absorbed back into meat loaf, about 10 minutes. Drain off any remaining juices, then carefully invert meat loaf onto a serving platter.
Suggestions: Ground round makes a leaner loaf. Remaining juices can be poured off and used as sauce.
Subsitution: Chipotle ketchup for regular ketchup is great.

The following is in the introduction to the chapter of this book headed
Pizza, Meat Pies, & Hot tamale meat balls Re-grind meat. Mix meats, corn meal, flour, garlic, salt, juice
and pepper. Form into approx. 200 small meat balls (#100 food dipper
works well). Mix tomatoes, chili powder, salt and pepper to taste.
Bring to boil. Add meat balls, lower heat and Pizza meat pie Preheat the oven to 350. In a medium bowl, combine the beef, milk, bread crumbs, salt, pepper, and garlic. Mix well. Pat the mixture into a 9" pie plate. In the same bowl, combine the mozzarella cheese, tomato paste, water, mushrooms (with juice), or Gryo meat (swedish kebab) Mix everything together and let sit in the fridge for 1-2 hours.
Blend in a food processor for about 1 minute. (When cooked, this will help give it a more traditional gyro feel on your palate. Otherwise, it just takes like cooked minced meat.)

blender, mix all except water until most of the mixture resembles coarse
