4 Seeded and diced tomato

Directions: Clean the chicken and put salt and pepper on both sides of the chicken. If you use kosher salt it sticks better. Grill the chicken for 6-8 minutes per side. Saute the tomatoes, garlic, capers, and half of the basil in the olive oil. Arrange chicken on plate with tomato/garlic/basil mixture on top. Use the remaining basil as needed to increase the basil taste. Serve with Bread.
