Directions: Heat oil in a large saucepan over medium-high heat. Add onion, carrot and celery; cook, stirring often, until softened, 5 minutes. Add garlic and cook 1 minute more. Season turkey with salt and pepper. Add turkey, broth, and thyme to the onion mixture and bring to a low boil. Reduce heat to medium-low, cover and simmer for 5 minutes. Stir in noodles, bring to a low boil, and cook until noodles are tender, about 5 minutes. Season to taste with salt and pepper and serve hot.
