Directions: Thom Christopher may have walked away with an Emmy for his role as drug kingpin Carlo Hesser on ONE LIFE TO LIVE, but he says his mother, Nancy, swept the awards when it came to talent in the kitchen. "My mother was the most incredible Italian cook," recalls Christopher (who was transformed into jewel expert Mortimer Bern on the ABC show after his character Carlo was murdered). "What's always fascinated me about my mom is that she could work and come home and unexpectedly make meals for 20 people and upward." Which is exactly what she did one evening in 1961 for Christopher and a group of actors who had been rehearsing all afternoon: "Everyone said, 'What are we going to do with a party of 24?' I called home and said, 'Mom, I'd like to bring the company home for dinner', and she said, 'How many?' I said, 'About 24.' By the time we got home, she had made chicken with tomato sauce, shells in tomato sauce, stuffed braciola, chicken soup with escarole. To this day, we all remember that awesome meal."Christopher's mom passed on her passion for cooking. The actor now enjoys his own elaborate dinner parties with his wife, Judy, in their Manhattan town house. Judy creates the entrees while Christopher whips up the
appetizers and desserts - from tuna-fish specialties to banana trifle.
His recipe for sauteed tofu and vegetables - which can be served as an
appetizer or a side dish - reflects his cooking philosophy. "I believe in economy in the kitchen," he says. "You can eat very nicely without spending the kitchen sink." Coat the cooking area of a wok or deep frying pan with sesame oil and heat until very hot. First, saute broccoli, asparagus, and carrots for a few minutes. Then add zucchini, snow peas, and peppers and cook for another minute or two. Add tofu and scallions last. Saute everything in sesame oil for 2 more minutes. Then add tamari or soy sauce to taste and cook a little longer, until vegetables are tender but not overcooked. Vegetables should be stirred frequently and cooking time should not exceed 20 minutes.

Bake on cookie sheet for Creamy tofu dressing Place tofu slices in a blender or a food processor fitted with the metal
blade. Add remaining ingredients and only as much water as needed to make

simmer about 30-40 minutes. Remove bay leaf. Serve over brown rice (or
maybe potatoes). Makes 4 reasonably sized servings.
The vegetables used were the ones I happened to Spicy rice and vegetables Saute vegetables in butter and honey. Add rice and continue to saute until
onions are clear. Add water, and boil 5 minutes. Turn heat to low; let
rice absorb water, about 35 minutes. In last 5 minutes of cooking, add
apple and almonds.
Stir-fried tofu with vegetables Mix tamari, syrup & pepper & set aside. In a wok, heat oil over high
heat for 1 minute. Stir-fry onions & garlic for 2 minutes. Add
carrots, bell pepper & cauliflower. Stir-fry for 1 to 2 minutes.
Add a little water if neces Tofu marinade Blend all ingredients.
Marinate strips of solid tofu for up to 4 hours.
Lemon-oregano grouper with vegetables 1. Preheat the oven to 375 degrees F.
2. Combine 1 tablespoon olive oil and the next four ingredients. Divide this vegetable mixture among four large pieces of aluminum foil, placing the vegetables in the center of each piece. Sprinkle each grouper fillet Marinade for meat & vegetables Here is a good marinade sauce thats low in salt and cholesterol.
METHOD

VARIATIONS
Add 1 teaspoon fresh grated ginger root, 1/2 to 1 teaspoon fresh
minced garl Leeks and tofu Rinse leeks well (get the dirt out from between layers) and chop,
greens and all. Heat oil in wok or skillet and add leeks. Saute a few
minutes, even to the point of the leeks starting to turn brown on the
edges. Add chopped, cubed, triangularly c Sauteed chicken with tomatoes, olives, and feta Score top of chicken breasts with sharp knife; place in large glass baking
dish. Whisk 1/2 cup oil, lemon juice, 6 teaspoons oregano, and garlic in
small bowl to blend. Season dressing to taste with salt and pepper. Chill 3
tablespoons dressing for tomato Sauteed chicken livers with mushrooms & onions Clean the livers by removing any connective tissue and cut them in
half. Pat dry on paper towels. Heat the butter and oil, add the

water-steaming, it develops greater nuances of flavor and preserves more
color in vegetables.
*Some recipes for braised vegetables call for a combination of cooking
methods: Certai Summer vegetables & potato salad w. anchovy dressing In a saucepan of boiling salted water cook the beans until tender, about 7 to 10 minutes. Using a slotted spoon, transfer the beans to a baking sheet and let cool, then pat dry. In the meantime, scrub, but do not peel the potatoes.
Add the garlic, bay l Assorted vegetables in a clear sauce Preparation: Peel turnips & carrots. Use melon scoop to cut turnips into
