Directions: Thom Christopher may have walked away with an Emmy for his role as drug kingpin Carlo Hesser on ONE LIFE TO LIVE, but he says his mother, Nancy, swept the awards when it came to talent in the kitchen. "My mother was the most incredible Italian cook," recalls Christopher (who was transformed into jewel expert Mortimer Bern on the ABC show after his character Carlo was murdered). "What's always fascinated me about my mom is that she could work and come home and unexpectedly make meals for 20 people and upward." Which is exactly what she did one evening in 1961 for Christopher and a group of actors who had been rehearsing all afternoon: "Everyone said, 'What are we going to do with a party of 24?' I called home and said, 'Mom, I'd like to bring the company home for dinner', and she said, 'How many?' I said, 'About 24.' By the time we got home, she had made chicken with tomato sauce, shells in tomato sauce, stuffed braciola, chicken soup with escarole. To this day, we all remember that awesome meal."Christopher's mom passed on her passion for cooking. The actor now enjoys his own elaborate dinner parties with his wife, Judy, in their Manhattan town house. Judy creates the entrees while Christopher whips up the
appetizers and desserts - from tuna-fish specialties to banana trifle.
His recipe for sauteed tofu and vegetables - which can be served as an
appetizer or a side dish - reflects his cooking philosophy. "I believe in economy in the kitchen," he says. "You can eat very nicely without spending the kitchen sink." Coat the cooking area of a wok or deep frying pan with sesame oil and heat until very hot. First, saute broccoli, asparagus, and carrots for a few minutes. Then add zucchini, snow peas, and peppers and cook for another minute or two. Add tofu and scallions last. Saute everything in sesame oil for 2 more minutes. Then add tamari or soy sauce to taste and cook a little longer, until vegetables are tender but not overcooked. Vegetables should be stirred frequently and cooking time should not exceed 20 minutes. |

Marinade for meat & vegetables Here is a good marinade sauce thats low in salt and cholesterol.

VARIATIONS
Add 1 teaspoon fresh grated ginger root, 1/2 to 1 teaspoon fresh
minced garl Creamy tofu dressing Place tofu slices in a blender or a food processor fitted with the metal
blade. Add remaining ingredients and only as much water as needed to make
desired consistencey. Process until smooth. Makes 2 cups. Food Exchange
per serving: FREE; CAL Skewered swordfish w/ vegetables &fresh herbs (gr) Brush the swordfish and vegetables with the olive oil and lemon juice.
Alternate on skewers. Let stand at room temperature for 20 minutes. Prepare
the grill.
Combine the ingredients for the herb butter in a small bowl and mix well
and reserve.
Bulgur wheat & vegetables In a medium saucepan combine mushrooms, zucchini, water, bulgur wheat,
onion, green pepper, garlic, chicken bouillon granules, basil, celery
seed thyme or marjoram, and pepper. Bring to a boiling, reduce heat;
stir in chopped tomato. Let stan Sauteed okra Wash okra, leave stems on. Place over boiling water and steam for about 15 minutes or until tender. Eat with fingers, dipping okra into melted butter and wine, or pour butter-mixture over okra.
Lentils with summer vegetables Put everything in a large pot, bring to a boil, reduce heat, cover and
simmer about 30-40 minutes. Remove bay leaf. Serve over brown rice (or
maybe potatoes). Makes 4 reasonably sized servings.
The vegetables used were the ones I happened to Tofu in black bean sauce In a wok, heat oil until nearly smoking.
Add garlic and ginger, and stir-fry rapidly over high heat for 1
minute.
Add black beans, and stir for 30 seconds. Add onions, and stir for
2-3 minutes.
Add soy sauce, sweetener, and water. Bring Pizza (tofu and mushrooms) Pizza Crust:

A few hours in advance, marinate mashed tofu with tomatoes that have been sprinkled with oregano.
Prepare pizza Peppers stuffed with tofu & rice All measurements are approximate! If making your own mixed veg I suggest
carrot, potato, corn, and peas. Cut the carrot and potato small, to about
the size of the peas and corn. Microwave until tender.
Saute onion, celery and mushrooms in lots Ricotta cinnamon pancakes with sauteed apples Before beginning prepare the apples.
1) In a food processor or blender, process the ricotta, eggs, honey, oil, lemon juice, flour, baking powder, salt and conamon to mix.
2) Preheat the oven to 200 degrees to hold the finished pancakes.
3) Heat a griddle Peppers stuffed with tofu and rice If making your own mixed veg I suggest carrot, potato, corn, and peas. Cut the carrot and potato small, to about the size of the peas and corn. Microwave until tender. Saute onion, celery and mushrooms in lots of vegetable stock until soft. Mix equal amo Skillet beef and vegetables 1. Brown meat and onion in 1 tablespoon of oil in large skillet.
2. Stir in wine; bring to a boil. Simmer, uncovered, over medium heat,
until liquid is gone, about 7 minutes.
3. Add tomatoes; reduce heat; cover and cook 10 minutes or until meat is Marinated vegetables Sauteed spinach 1) In a large skillet, saute minced garlic in the olive oil.
2) Add half of the fresh spinach.
3) Cover the skillet and saute the spinach.
4) When the first spinach has reduced in size enough, add the remainder.
5) Add the garlic salt and continue to saut Sauteed eggplant Cut eggplant into slices 1/4" thick. Sprinkle with salt & let sit
for 1/2 hour. Rinse, squeeze & pat dry. Saute in oil till soft,
adding more oil if you need it. Place on paper towels.
Serve sprinkled with hot chili powder if desir Silver dollar corn cakes with sauteed corn salsa topping Fit food processor with the grating disc, or get out you hand grater.
Grate the potatoes, remove from work bowl to paper towels, then pat
dry. Grate 1/2 cup of the corn kernels and the jalapeno and the onion
