Spicy glass noodle salad is often served as a refreshing snack in Thailand. It also makes a great party dish as you can serve it at room temperature.
1. Combine pork, garlic, and cilantro, and chop well to combine.
2. Bring water to a boil in saucepan, add pork mixture and mushrooms. Simmer for about 3 minutes, until cooked.
3. Add glass noodles in a saucepan.
4. Strain or use slotted spoon to transfer pork, mushroom, and glass noodle mixture to a bowl. Add other ingredients.
5. Garnish with cilantro and Chinese celery leaves, and serve.
