Ingredients:
4 bone-in, 1 inch thick rib pork chops
2 jalapeno chilies,finely chopped
1 chopped fresh cilantro
1 grated lime peel
1 minced garlic
1 ground chipotle chile pepper or chile powder
3 Teaspoon(s) chopped fresh* oregano
2 1/2 salt
1 1/2 Teaspoon(s) ground cumin
1 Teaspoon(s) freshly ground black pepper
1/2 Teaspoon(s) ground allspice
1/4 Cup(s) fresh lime juice
1/4 vegetable or olive oil
3 tequila
Directions: Place the pork in a large resealable plastic bag. In a small bowl, stir toget her all remaining marinade ingredients. Pour over pork; seal bag. Refrigerate overnight, turning occasionally. Heat grill. Remove pork from marinade, leaving as much marinade on as possible; discard remaining marinade. Place pork on gas grill over medium heat or on charcoal grill 4-6 inches from medium coals. Grill 7-10 minutes or until no longer pink in center, turning once. Place on serving platter; loosely tent with foil. Let stand 5 minutes. *Or 1 teaspoon dried oregano. May substitute water for tequila. Marinade may be used for country spareribs, flank steak or butterflied leg of lamb.
