Ingredients: 2 Butter or bacon fat 3/4 Rice 1/2 Chopped green pepper 1/2 Chopped onion 1 Garlic clove 1 Mixed Vegetables (16 oz) 1 Stewed tomatoes (16 oz) 1 Chicken broth (12 oz) 1 Tuna, flaked (12.5 oz) 1/2 Shredded cheddar cheese |
Directions:
1. Heat fat in skillet. Add rice, green pepper, onion and garlic; cook 5 minutes. 2. Drain mixed vegetables. 3. Combine rice with stewed tomatoes and chicken broth. Bring to boil, cover and simmer until rice is cooked, about 25 minutes. 4. Stir in tuna and vegetables; sprinkle cheese over top. Heatt until cheese is melted.
