Directions: Remove giblet packet from hens; rinse hens with cool water. Drain; set
aside. Drain pineapple well reserving juice. Place juice in small
saucepan with jelly. Heat over low heat until jelly melts, stirring
occasionally. Cook onions in butter in large skillet over medium-high
heat until tender. Add rice, reserved pineapple, currants, nuts, broth,
and ginger; heat thoroughly.
Spoon about 2/3 cup mixture into cavity of each hen. Use wooden picks,
soaked in water, to enclose filling. Place hens breast side up in
roasting pan on rack coated with cooking spray. Baste with jelly mixture.
Roast at 400 degrees F. for 10 minutes; reduce oven temperature to 350
degrees F. [and] continue roasting for 1 hour or until internal
temperature registers 180 to 185 degrees F., basting every 30 minutes with
jelly mixture. Cover remaining stuffing and bake during last 30 minutes
with remaining rice.
Makes 6 to 8 servings.
*Substitute red currant jelly for red pepper jelly, if desired.

Stuffed bell peppers (arrowhead) Steam bell peppers until tender. Cook contents of the box according to
package directions. After the rice is cooked add one egg and the
vegetables to the rice. Stuff the mixture into cooled bell peppers, and

Heat the oil in large skillet. Add the onion, celery, and garlic and
saute over low heat until the onion is translucent. Add the green

Cont Cheese stuffed zucchini blossoms w/fresh toma Preheat oven to 325 F.
Mix filling ingredients, adding tomato last. Add salt and pepper to taste.
Stuff squash blossoms carefully with about 1 tb. of filling each; don't
overfill. Drizzle olive oil over blossoms. Place in a well-oiled sha Dolmathes (stuffed grapevine leaves) Rinse leaves in cold water. Let stand in warm water as dolmathes are

Stir in salt and pepper to taste and cool to lukewarm. Fold in egg whites. Slice tops from tomatoes and scoop out pulp, leaving Deviled cornish hens Split hens in half down the back. Place in a shallow pan. Combine remaining
ingredients, except bread crumbs and pour over hens. Marinate several
hours, turning occasionally. Preheat oven to 350. Sprinkle half of the
bread crumbs over hens. Bak Aceitunas rellenas - stuffed olives Drain olives and stuff with the anchovy fillets. Combine the other
ingredients, except parsley; pour over the olives and marinate over-night.
Mix in parsley half an hour before serving. If the idea of stuffing the

triangular pieces of cheddar cheese cut to fit the individual peppers.
Dip peppers in an egg wash then into a mixture of half cornmeal and half
