Ingredients:
2 16 ounce cans of chopped tomato
1 peeled and chopped ginger root
2 large, peeled and diced sweet potato
3 medium, finely slice onion
1 1/2 Ounce(s) olive oil
16 105/152 Ounce(s) vegetable stock
1 Ounce(s) salt
1 Ounce(s) black pepper
Directions: Heat the oil in a saucepan. Add the onions, sweet potato and ginger root. Cover the pan and simmer for 15-20 minutes, until the vegetables are soft. Add the tomatoes and vegetable stock. Bring to a boil and simmer for 30-40 minutes. Puree using hand blender, season to taste with salt and pepper. Serve either hot or cold.
