Directions: Mix fish and vegetables in bowl. Set aside. In small bowl, combine oil, vinegar and salt, pepper, oregano, and garlic powder to taste. Toss well with fish mixture. Chill at least 2 hours before serving, mixing well before doing so.
This is a great summer salad alternative to a hot fish dish. It is also good stuffed in a pita pocket and topped with lettuce and other veggies.
You can substitute canned tuna for the white fish, if necessary.

Romaine salad Cut bread into small cubes and saute in 2 to 2 1/2 tablespoons olive
oil, until browned and crisp. Remove from heat and set aside. Combine
remaining olive oil and garlic. Let stand for 15 minutes. Wash and dry

Carrot cilantro salad Whisk together the lemon juice, olive oil, sugar, salt, and pepper in a
large bowl. Add carrot, green onion, cilantro, lemon rind, and cumin seed;
toss to mix. Serve immediately.
Avocado & potato salad with horseradish *Choose avocados that are firm, with just a slight give. If the avocado is
soft enough to hold an indentation, it's overripe and won't have the rich
nutty flavor that you want for this salad.
Bring water to a boil in the bottom of a Country ham, virginia peanuts and black-eyed pea salad Put peas in a saucepan with 3 cups water and 1/4 ts salt. Simmer over
medium-high heat until fully cooked but not mushy, 25-30 minutes.
Drain. Rinse under cold water. Dry well. Whisk together 2 tb peanut
oil, 1 tb vinegar and 1/4 ts peanut butt Sunset salad Drain pineapple, reserving both juice and pineapple.
Mix gelatin, sugar, and salt in a small saucepan; stir in reserved juice
from pineapple and 1/2 cup water. Heat slowly, stirring constantly, until
gelatin is dissolved; stir in orange juice and Hot spinach & mushroom salad Wash fresh spinach and remove all tough stems; drain well. In hot oil,
saute mushrooms and onions until onions are wilted. Add lemon juice,
vinegar, sugar and pepper; mix well. Stir in spinach and cook only
until spinach begins to wilt. Remove fr Orange onion salad Completely dissolve gelatin in boiling water. Add vinegar and pepper.
Combine cold water and enough ice cubes to measure 1 1/4 cups. Add to
gelatin; stir until slightly thickened. Remove any unmelted ice. Add
oranges, celery and onion. Spo Don's piquant salad dressing Mix all ingredients together. Chill for 1-3 hours. Shake well before
pouring over salad.
Antipasto salad with garlic dressing This salad is pretty hardy, but to turn it into a main dish salad, just add
pasta shells, bows, or tortellini. Salad: Place beans, artichoke hearts,
roasted peppers and olives in salad bowl, add lettuce, Pour salad dressing
over all and toss well. Fruchtsalat mit nussen (fruit salad with nuts) Scoop out melon with melon baller. Cut peel from oranges, remove white
membrane, and slice crosswise. Cut grapes in half and remove seeds. Line
a glass bowl with lettuce leaves; arrange melon balls, orange slices,

room temperature for best flavor.

Cook white and pale green scallions in oil in a 10- to 12-inch nonstick
skillet over moderate heat, stirring, until softened, 1 to 2 minutes. Add
tomatoes, salt, and pepper and cook, stirring, until tomatoes begin to

Place in a 8 by 8 in. pan. Freeze for at leas Chutney chicken salad In a large bowl, whisk together the mayonnaise, chutney, curry powder, lime zest, lime juice and salt. Add chicken and toss with the dressing until well coated. Add more mayonnaise to taste, if desired. Cover and refrigerate until serving.
Cold pasta salad Add all ingredients together and toss lightly. Add dressing and mix well. Refrigerate at least 2 hours. This keeps in
the refrigerator for over a week. If you use fat free dressing, this has very few calories.
Cool lemon chicken salad Mix dressing, basil, juice and peel in large bowl. Add remaining

pieces and store in an airtight container in the refrigerator until 20
minutes before ready to use. Allow spinach to come to room temperature
before using.
In a small frypan, Green pasta salad 1. Break the spaghetti strands into thirds. Cook the spaghetti in a
large quantity of boiling water until tender (about 8 min). Drain
and set aside. 2. Whisk together in a small bowl the mayonnaise,
garlic, vinegar, and curry powder. Add thi Buffet taco salad Brown ground beef with taco seasoning. Place items listed in a vugget
fashion in the above order. Each person layers his own salad, starting
with corn chips, ground beef and going down the list. There are other
ingredients you may wish to add.
New potato salad (satterly) In a medium pot, cook quartered potatoes in salted water till tender.
Meanwhile, combine remaining ingredients in a small bowl. Drain potatoes,

seeds, lime juice, half of the green coriander and water and mix

work for the diabetic IF sugar substitute is used.

egg yolks. Add 2 cups water; mix well. Cook over medium heat until mixture
comes to a full boil, stirring constantly. Cool about 45 minutes or until completely

Spinach salad dressing whisk verything thoroughly until blended and emulsified.
Tarragon pasta salad Pile salad ingredients in a serving bowl as you process them. Combine and taste to adjust seasonings. Serve.
Lemon couscous salad -Bringer the water and lemon juice to a boil, add the couscous.
-Cover and remove from heat.
-Allow to steep for 5 minutes.
-Fluff the couscous with a fork and toss with the remaining ingredients.
-Season with salt and pepper.

Cantaloupe with chicken salad In a large bowl, combine chicken, blueberries, celery, grapes and almonds.
In a small bowl, mix dressing ingredients. Pour over the chicken mixture
and toss gently. Spoon into cantaloupe halves. Serves 6.
