Stuffed Peppers (Vegetarian)



Ingredients:
1/2 onion
2 clove garlic
1/4 Cup(s) green pepper; diced
1/4 yellow pepper; diced
1/4 Cup(s) mushrooms; diced
2 garden burgers (vegetarian); diced
1/2 14 1/2 oz can diced tomatoes
4 43/249 Ounce(s) feta cheese
1 salt and pepper; to taste
1 fresh basil
1/4 Cup(s) pinenuts; toasted
1/2 Cup(s) lentils; cooked
2 whole red or green peppers
Directions: Preheat oven to 375F . Cut top off peppers. Place in microwavable dish with a small amount of water. Cover and microwave for 6-7 minutes until slightly softened. Saute onion, garlic, peppers and mushrooms. Add rest of ingredients and stuff into peppers. Bake for 25 minutes. Serve with tomato sauce.
