Directions: Preheat oven to 350 degrees F. Grease 9 x 13 inch pan.
Squash Preparation:
Cook squash in 2 quart sauce pan filled half way with water and a pad of butter, salt and pepper. Boil until the squash is done.
Mix:
In a large mixing bowl add melted butter, grated carrots, cream of chicken soup, 3/4 of the stuff mix and sour cream and diced onion. Mix all together.
Bake:
Pour mixture into greased pad and sprinkle remainder of the stuffing mix onto the top. Bake for 30 minutes.
Alternatives:
You can add a cup of dried cranberries to make it a bit for festive for the Christmas season.
