Directions: Fill the mixing bowl with the cold water and squeeze the lemon juice into it. Drop the lemon half into the water as well. Set the bowl aside. Using a sharp knife, trim off and discard the top 1/2" of each artichoke. Dip the cut tops into the acidulated water (to keep them from turning brown).
Pull the outer leaves off the artichokes, leaving a core of tender green leaves. Gently pry open the artichokes; using a small melon baller, scoop out and discard the chokes. Cut the artichokes vertically into three or four slices, dropping them into the acidulated water as you work. Bring a large saucepan of salted water to a boil. Drain the artichokes, and add them to the pan. Simmer for 10 minutes. Then
drain the artichokes, reserving the cooking liquid and rinse them under cold water. Set them aside. Bring the reserve artichoke cooking liquid to a boil, and add the asparagus. Simmer for 3 minutes; then drain, again reserving the liquid. Rinse the asparagus under cold water, and set it aside. Bring a large pot of fresh water to a boil. Add the orecchlette, and cook at a rolling boil until just tender.
Meanwhile, heat the olive oil and 1 tablespoon of the butter in a saucepan. Saute the scallions and garlic for 3 minutes. Then stir in the olives, peas, reserved artichokes and asparagus, remaining 1 tablespoon butter, 1/3 cup of the reserved cooking liquid, and 3 tablespoons of the Parmesan. Stir well, and cook just until heated through, 2 minutes. Stir in 2 tablespoons of the pasta cooking water, and transfer the sauce to a heated serving bowl. Drain the pasta, and toss it in the bowl with the sauce until well coated. Season with salt, pepper and the additional 1 tablespoon grated Parmesan. Serve immediately.

Green beans with pine nuts 1) Cook beans, uncovered, in 1" of water in a 3 qt sauce pan, 4
to 8 min... or `til crisp-tender... then drain...
2) Melt the butter in a skillet over med. heat, and add the pine nuts.
Cook stirring frequently `til golden
3) Add the beans Tomatoes with pasta stuffing Wash the tomatoes. Slice off the tops, and scoop out the pulp with a small spoon. Chop the pulp and turn the tomatoes upside down on a rack to drain. Place the pulp in a strainer, and allow the juices to drain off. Meanwhile, boil the pasta in a pan of bo Green bean casserole Mix together beans, soup, and some of the onions. Pour mixture into casserole dish. Bake at 350° for 20 minutes. 10 minutes into baking, put remaining onions on top of casserole.
Spring vegetable stew WASH THE SLICED LEEKS really well, as they are always sandy. Trim the
artichokes. (See instructions in the recipe "Artichokes and Peas.") Keep
the finished pieces in a bowl covered with water and the juice of one
lemon. Bring a large Spring green onion soup Steam the green onions and celery until tender. In a large frying pan,
saute the green onion in oil for 1-2 minutes, then add all the seasonings
and saute 1 more minute. Filling the blender twice, blend all the
ingredients until fairly smooth, Parmesan bow-tie pasta COMBINE pasta, spaghetti sauce, ricotta cheese, 1/2 cup of the mozzarella cheese and 2 Tbsp. of Parmesan cheese in large skillet or large saucepan.
COOK on medium heat 10 min. or until heated through, stirring occasionally. Remove from heat.
SPRINKLE with Tarragon pasta salad Pile salad ingredients in a serving bowl as you process them. Combine and taste to adjust seasonings. Serve.
Green chile sauce In oil in a heavy saucepan, saute' garlic and onion. Blend in flour
with wooden spoon. Add water and green chili. Bring to a boil and
simmer, stirring frequently, for 5 minutes.
Brussel sprouts pasta Trim the ends off the Brussel sprouts and steam the sprouts in boiling
water until just tender. Drain. Heat butter and oil and saute leeks. Add
peppers and Brussel sprouts, stirring until just golden on the edges. Add
soy sauce and let stand covere Spinach artichoke pasta salad Combine the first three dressing ingredients in the bottom of a serving bowl. Add remaining ingredients to the bowl and toss until well combined. Season with salt and pepper to taste.
Pasta salad (good for picnics) Cook the tortellini according to package directions. Drain and rinse the
artichoke hearts and cut them into quarters. Add the remaining salad
makings
(except the parmesan) and toss with the dressing. Give it a generous
sprinkling of parme Egg pasta dough abm Put flour in the pan and crack the eggs into the center of the flour. Start
the machine and check to make sure it isn't working too hard. If so, add a
tablespoon of cold water at a time until it is kneading without trouble.
