Spinach Artichoke Pasta Salad



Ingredients:
1/12 Quart(s) olive oil
1 1/2 Ounce(s) red wine vinegar
1 fresh squeezed lemon
6 baby spinach
15 drained, coarsely chopped artichoke hearts
1/3 found in specialty cheese cases ricotta salata cheese
1/2 pitted black olives
1/2 chopped red onion
1/2 Bunch(s) fresh parsley
1 cooked al dente, cooled penne pasta
1 Package(s) pepper
1 Ounce(s) salt
Directions: Combine the first three dressing ingredients in the bottom of a serving bowl. Add remaining ingredients to the bowl and toss until well combined. Season with salt and pepper to taste.
