Directions: Make a smooth batter with the flours, eggs, milk and water, then stir in
the cool melted butter for extra richness and to prevent sticking during
cooking. Use a 6-inch pan and make thin pancakes in the usual way, but be
sure to stir the batter vigorously in between making each pancake or all
the buckwheat flour will sink to the bottom of the mixture. If preparing
ahead, cool the pancakes then stack them (interleaved with greaseproof
paper) and wrap in a foil parcel.
To make the filling, wash and boil or steam the spinach until just tender.
Chop it and squeeze out all the liquid (save the juices for a soup). Chop
the onion finely and sweat it in a knob of butter until it's deliciously
soft. Stir in the spinach, season with a little salt, lots of pepper and
the garlic. Toast the walnuts and crumbled Stilton into the spinach
mixture to give it savoury flavour and bite. Stuff the pancakes with the
mixture, roll them up neatly and pile them into a lightly buttered gratin
dish. Cover with foil and heat through in the oven for 25-30 minutes at
400 F (200 C) gas mark 6.
Make a smooth rich sauce with the butter, flour, stock (preferably good
chicken stock) and cream. Let it simmer for about 5 minutes, stirring once
or twice, then season with the cheese, mustard and salt and pepper. If the
sauce is made ahead, reheat it in a double-boiler for serving, then pour it
over the dish of pancakes just before bringing to table.

Wild rice pancakes In a heavy saucepan combine rice, water and salt. Bring to a boil, cover and simmer 45 to 50 minutes, or until tender and water is absorbed; transfer to a large bowl to cool. saucepan. In a soup pot, melt butter and stir in flour. Gradually stir in
milk, cream and sour cream. Stir over low heat until mixture bubbles and
thickens slightly. Add spi Tomato and spinach soup Heat a medium soup pot over moderate heat. Add oil, shallots and garlic. Saute 5 minutes. Add drained tomatoes and crushed tomatoes, stir. Add stock an

3. Cover and bake about 20 minutes or until cheese is melted. Serve warm w Hot spinach salad In a 3 quart serving bowl, combine spinach, eggs, and radishes. Cover and
refrigerate. Immediately before serving time, place bacon in an 8-inch
skillet. Cook over medium-high heat for 6 minutes or until crisp, stirring

Grate raw potatoes into water to which lemon juice has been added. Place
potatoes in a strainer or cheese cloth and Apple walnut topping for pancakes In a skillet, add all the ingredients and cook over medium high heat, stirring, until the apples are tender and the brown sugar has melted to form a syrup. This is so good, it would even be great over ice cream!
Stuffed striped bass with spinach, shrimp and mushrooms Bone the striped bass through the back and remove any stray bones, and
store fish in the refrigerator.
Cook the onion and garlic in a tablespoon of butter in a medium saute pan
over medium heat until the onion is traanslucent, about 10 minutes. Add

These freeze well. To reheat, lay on a lightly oiled baking sheet and bake in a 350 F oven, for 10 to 15 minutes, until heated through.
1. Melt 2 tablespoons butter in a large saute pan over low heat. Saute onion and garlic in but Sourdough pancakes #4 Mix well and let stand a few moments. Drop by large spoonsful on hot

NOTE:

Matzo latkes (pancakes) In a mixing bowl, beat the egg yolks until they light and frothy. Stir in
the milk/water, matzo meal, sugar, and salt.
In another bowl, beat the egg whites until they form stiff peaks. Fold the
egg whites in the egg/matzo mixture.
In a fryin Wilted spinach frittata Trim off the tough spinach stalks and wash leaves thoroughly to remove any grit. Shake off as much water as possible, then leave spinach in a colander to drain. Beat eggs lightly with balsamic vinegar and salt and pepper to taste. Preheat broiler.
Heat Spinach pesto lasagna Mix squeezed spinach, pesto, 1 1/2 cup mozarella and egg into ricotta. Put 3/4 cup spaghetti sauce in bottom of 9x13" pan. Put in 3 lasagna nooles, top with half a cup of ricotta mix, put in spaghetti sauce, 3 more noodles, rest of ricotta mix and Chicken with mint-spinach sauce Pour enough broth into medium-size skillet to just cover chicken breasts.
Bring liquid to boiling. Lower heat. Add chicken. Cover and simmer until
cooked through, about 15 minutes.
Meanwhile, saute onion in margarine in nonstick skillet until soft Ravioli with ricotta and spinach Put the spinach in a large pan of lightly salted boiling water and cook
until wilted. Drain and plunge into an ice bath. Drain thoroughly and
press out as much of the remaining water as possible. Chop the spinach
coarsely and mix with the ricotta. Sea Stilton vinaigrette Carmelize the onions by sauteing them slowly in a saute pan or roasting
them in the oven. Deglaze with sherry vinegar. Cool and chop onions. Add
herbs and stilton cheese.
Add red wine to moisten the mixture and the mustards. Slice the scallions
