Directions: Mix together pork, scallions, ginger, 2 T mirin and salt. Oil a steamer
rack and line with lettuce leaves.
Cut wrappers into 3 inch rounds, discarding excess dough. Working with 1
wrapper at a time in the palm of your hand and keeping remaining wrappers
covers with plastic wrap, mound 1 tsp filling in center. Cup hand and
press wrapper agains filling, forming an open sack. Arrange dumplings as
formed in 1 layer on steamer rack.
Steam dumplings over boiling water until filling is cooked through, about
10 minutes. Transfer to a serving plate and top each with 1 cilantro leaf.
Stir together remaining 4 T of mirin, scallinons, soy sauce, vinegar, and
sesame oil in a small bowl and serve with hot dumplings.
