Spicy Chicken with Banana Fritters



Ingredients:
30 Gram(s) Butter
1 medium (150g) onion, sliced
2 Teaspoon(s) Ground coriander
2 Teaspoon(s) Garam masala
1 Teaspoon(s) Ground ginger
4 Chicken breast fillets
1 Cup(s) Chicken stock
1 Teaspoon(s) Cornflour
1/2 Cup(s) Sour cream
4 medium Bananas
1 Egg, lightly beaten
1 Tablespoon(s) Milk
1/2 Cup(s) Packaged breadcrumbs
Directions: Heat butter in pan, add onion, cook, stirring, until soft. Add spices, cook, stirring, 1 min. Add chicken, cook until lightly browned all over. Stir in stock, simmer, covered, about 10 mins or until chicken is tender. Remove chicken from pan; keep warm. Stir in blended cornflour and sour cream, stir over heat until mixture boils and thickens slightly. Return chicken to pan, stir until chicken is coated in sauce. Serve with banana fritters. Banana Fritters: Toss bananas in flour, shake away excess flour. Dip into combined egg and milk, then combined breadcrumbs and garam masala; cover, refrigerate 20 mins. Deep-fry bananas in hot oil until lightly browned; drain on paper towel.
