Slim and Savory Spinach Potato Soup



Ingredients:
4 Cup(s) Chicken broth
3 medium Leeks white part only
6 Ounce(s) Spinach trimmed and chopped
3 Cup(s) Cubed potatoes

Directions: Bring broth, leeks and spinach to a simmer. Cover and cook 5 minutes. Add potatoes and cook, covered, 20 minutes, or until potatoes are tender. Puree half the mixture; return to saucepan. Stir in butter sprinkles and pepper. Serve hot or cold.
