Directions: 1. In blender or food processor, combine vinegar, basil, garlic, salt, sugar, cheese, and oil. Whirl or process until smooth and well combined. Let stand at room temperature for 1 to 2 hours to blend flavors. Stir well with a whisk or fork before using. 2. Core tomatoes (peel first, if you wish). Slice about 1/2 inch thick. Arrange in a shallow bowl or on lettuce on individual plates. Grind pepper over tomatoes to taste.
3. Drizzle tomatoes evenly with pesto. Garnish with pine nuts, if you wish.

Warm grilled potato and fennel salad with herbed buttermilk dressing Preheat the grill to medium-high.
Place the potatoes in the center of a double thickness of heavy aluminum foil. Toss with 1 to 1 1/2 tablespoons of the oil and season lightly with salt and pepper. Wrap up in the foil, turning up the edges to seal. Place Sliced pork with wood ear fungus Slice the pork across the grain into very thin slices and cut into bite sized pieces. Place in a dish with the #1 seasoning ingredients. Mix well and leave for 20 minutes.
Drain the previously soaked Wood Ears, and chop finely. Wash and dry the spinach l Barbecued goat with lemon salad and almond pesto Light barbecue or grill.
Rinse and pat dry goat legs.
In a blender, mix garlic, mint leaves, pepper and olive oil until smooth
paste is formed. Rub paste all over both legs and season with salt. Place

Asparagus cornet with lemon dressing ** See recipe for Puff Pastry.
For the pastry cornets:

Roll the pastry out onto a lightly floured work surface to 3" x
20" rectangle, 1/4" thick. Cut the rectangle into 4 long strips, each
3/4& Orange salad dressing Combine fruit juice, flour and sugar. Mix well and cook until thickened (add a few extra tablespoons of flour if needed).
Remove from heat, beat in one egg; let cool.
Fold in whipped cream and spoon over molded salad. Sprinkle with grated american cheese. Electronic gourmet's herb salad dressing 1) Place oil, herbs, salt and pepper in a shaker bottle or large glass
measuring cup. Let stand at room temperature for 3 to 4 hours. The
longer the better.
2) Add vinegar and shake or stir well to blend.

Stewed tomatoes Place the tomatoes, cored side down, in a large saucepan. Add the
scallions and water and simmer very slowly, stirring occasionally, for
about 30 minutes. Stir in the dill, salt and pepper, and simmer
about 10 minutes or more, until tomatoes are Asparagus pesto & pasta Cook spaghetti al dente and drain – add one tablespoon oil to hot drained spaghetti.
Place remaining oil and Asparagus and all other ingredients in blender.
Blend until smooth and serve over spaghetti.
Anchovy yogurt dressing Excellent dressing for vegetables, pasta, fish, or salads. Place all ingedients in a blender and process until smooth. Refrigerate to blend flavors; adjust seasoning before serving.
Buttermilk mustard dressing Blend all ingedients together and chill before serving. Makes about 3/4

Halibut with cilantro pesto * Fish steaks should be cut about 1-inch thick and weigh about 5 oz
each. Prepare Cilantro Pesto and set aside. Heat oven to 450
degrees F. Place the fish steaks in an ungreased rectangular baking
dish 13 X 9 X 2-inches.
Mix margar Aiken county corn bread dressing Pepper to taste
Make a batter of the cornmeal, flour, salt, baking powder, shortening (the
oil from the baking fowl is generally used) and milk. Bake in a hot oven
(400) until done, about half an hour. Then crumble the bread, add one

over sliced, peeled tomatoes at least 6 hours before serving. This sure
