Directions: Favored by many, this juicy kimchi is for all seasons. The thinly sliced radish and cabbage squares are elaborated with narrow julienne of aromatic vegetables such as Korean watercress and green onions. Furthermore, the fresh red pepper strips and the finely powdered red peppers exaggerate the flavor and create an appetizingly reddish color for the kimchi. It goes nicely with your favorite snacks.
PRELIMINARIES:
1. Preparing the Vegetables. Trim and wash the Korean radish, cleaning the
skin with a soft sponge. Separate the tender inner leaves of the celery
cabbage. Trim off the leaves of the Korean water-cress and green onions;
wash them with cold water and drain.
PREPARATIONS:
1. Cut the cabbage leaves at 1 1/4"(3 cm) intervals and halve the cut
pieces; cut the radish into thin 1 1/4" (3 cm) squares.
2. Sprinkle the cut-up radish and cabbage pieces with salt and allow them
to stand until softened, about 30 minutes. Rinse with water and drain.
3. Cut the stems of the Korean watercress and the green onion stalks into 1
1/2" (4 cm) lengths; cut the onion pieces into narrow strips. Halve the red
peppers, seed, and cut them into narrow strips; peel the garlic and ginger
and cut them into slivers.
4. Add all the prepared vegetables--the green onions, Korean watercress,
ginger, garlic, and red peppers--to the salted cabbage and radish pieces.
Toss the vegetables throughly and put the mixture into a crock.
5. Mix the fine red pepper powder and a brine prepared with 1/4 cup of
table salt and 4 to 5 quarts of water. If the red pepper powder contains
big pieces, wrap the powder in 3 layers of cheesecloth and shake in the
brine to prevent any big pieces from getting into the kimchi souse and
clouding it.
6. Pour the kimchi souse over the vegetable mixture in the crock.
REMARKS:
1. If you like this kimchi less spicy, red pepper threads may be
substituted for the red pepper powder.
2. You may try a combination of radish, carrot, and cucumber for a good
color combination.

prepared early in the day and reheated at serving time since the
flavor improves. Ms. Brody says that this dish could easily

Apple and cabbage appetizer SERVES 6-8 AS A VEGETABLE DISH
This is more typical of Pennsylvania Dutch cooking than anything else. The apples add a sweetness to the harsh taste of that old lifesaver, cabbage. This dish works well as an accompaniment to most meals.
Heat a large Dutch Gefullt krautroladen (stuffed cabbage rolls) In a medium bowl cover brown rice with hot water and soak for 3 hours.
Drain. In a 2-quart saucepan combine rice, 3 cups water, and 1 1/2 t
salt. Simmer covered for 40 minutes or until the liquid is absorbed. Add
the dillseed, marjoram, and Caraway-sour cream cabbage In saucepan, bring the water and 1/2 tsp. salt to boiling. Add cabbage and
onion; cook, covered, till crisp-tender, 7 to 8 minutes. Drain, reserving
cooking liquid. Add enough water to cooking liquid to make 3/4-cup. In same
saucepan blend togethe Sliced calves' liver In large skillet, saute onion rings in 1 tbs. butter until soft & golden brown. Set aside 1/3 of onions; stir 3/4 of raspberries into remainder. Cook no more than 30 sec. Salt and pepper to taste. Keep warm on hot serving platter. Add remaining butter Hot and sour cabbage Preparation: Separate, wash & dry cabbage leaves. Stack them up and cut

this
dish, I recommend sauteeing the cabbage
&
onions, separately. This method
brings out the flavor of each food.
Saute the cabbage in 1 tbsp of corn oil about 15 minutes. Set Calzonetti stuffed with red cabbage and chevre (tuscan) 1. To make the dough, sprinkle the yeast over 1/2 cup warm water in a

over high heat until it loses it's raw look. Add celery, sage,

Foil baked chicken rice & cabbage Cut chicken in quarters. Simmer onion in the melted butter for 5
minutes. Add cabbage and simmer 10 minutes longer. Add salt, rice and
undiluted soup, stirring as it heats. Have ready four pieces of
aluminum foil, 12 x 12 inches. Lightly oil one side and Cabbage and potatoes Cut the cabbage in half and soak in salted water for 15 minutes. Agitate
and drain well. Shred the cabbage.
Heat the bacon fat or butter in a large, heavy skillet and add the diced
potatoes. Cook over medium heat until lightly browned. Add 2 Kimchi 1. In a lg. colander with a bowl underneath to catch the water, cut the cabbage into bite-size pieces.
2. Sprinkle with 5-tsp. salt, mixing the salt in well.
3. Let sit at room temperature for 3 hours.
4. Rinse cabbage thoroughly 2-3 times with water.
Crockpot pork and cabbage Season pork chops lightly with salt and pepper; set aside. Place cabbage,
apples, and onion in Crockpot. Add remaining ingredients, except pork
chops. toss together well to evenly distribute spices. Arrange pork chops
on top of cabbage mixture, st Celery and cabbage bake Bring water to boil in large pot. Add cabbage, celery, salt &
caraway. Boil 5 min, drain well. Sauce: melt butter, add flour &
cook, stirring 1 min. Slowly add milk in stream, stirring

Cook and stir the meat until browned. Drain off the excess fat. Add
Worchester sauce, hot pepper sauce, salt and pepper and stir at medium
heat for several minutes. Set aside in serving Lunchbox: turkey with creole mayonnaise and sliced dills In small bowl, stir together mayonnaise, onion, mustard, vinegar, and
black and cayenne peppers to taste; spread on cut sides of rolls. Top 4 of

Heat oil in a Dutch oven and saute onions 3 minutes. Add cabbage and
