Ingredients: 16 Ounce(s) Bow-tie pasta noodles 10 Ounce(s) Frozen chopped spinach 1 Teaspoon(s) Olive oil 1 large Onion; (1 cup chopped) 14 1/2 Ounce(s) Italian stewed tomatoes 15 Ounce(s) No-salt-added tomato sauce 2 Teaspoon(s) Bottled minced garlic 1 Teaspoon(s) Dried Italian seasoning 12 Ounce(s) Reduced-fat cottage cheese 6 Tablespoon(s) Shredded Parmesan cheese |
Directions: Bring 2-1/2 quarts of unsalted water to a boil in a covered 4-1/2-quart (or larger) Dutch oven or soup pot. When the water reaches a rapid boil, add the noodles and cook until firm-tender, about 9 minutes. Meanwhile, place the block of frozen spinach in a microwave-safe dish and microwave on high for 4 minutes, uncovered, to begin defrosting. While the spinach defrosts, heat the oil in an extra-deep, 12-inch nonstick skillet over medium heat. Peel and coarsely chop the onion, adding it to the skillet as you chop. Cook the onion until soft, about 3 minutes, stirring from time to time. Meanwhile, open the cans of tomatoes and tomato sauce. Add the garlic, stewed tomatoes, tomato sauce and Italian seasoning. Cook 5 minutes to blend flavors, stirring from time to time. While the sauce simmers, drain the spinach, pressing out any excess moisture. When the sauce has simmered 5 minutes, stir in the spinach and cottage cheese. Stir to mix well. Cook for 2 minutes or until warmed through, then remove the skillet from the heat until the noodles are done. Add black pepper to taste, if desired. Serve at once over hot, drained noodles, topping each serving with 1 tablespoon Parmesan cheese. Makes 6 servings. Note: This dish can be ready to serve in 15 minutes if you use a very thin pasta, such as angel hair.

Using fork, gradually beat in buttermilk, then butter. Stir in dill and

Spray sheet pan with PAM lay wontons on the sheet pan. Spray wontons with
PAM and season with salt and any other seasoning.
Bake in 350F oven for 10 minutes or golden brown. Cool befor Spinach-strawberry salad Saute almonds in butter. Mix spinach, strawberries, almonds.
Pour dressing over and serve.
For Dressing:
Mix all other ingredients in a glass jar and refrigerate.

Roast the peppers by placing them on an open gas flame, turning them frequently with tongs until all sides are charred black, about 7 to 10 minutes. Spinach in phyllo Preheat oven to 375F . Boil 2 quarts of salted water. Place spinach in
the boiling water for 2 to 3 seconds and remove.
Place in colander, rinse under cold water and squeeze out excess water.
Saute onions in olive oil until soft, about 6-8 minutes. Add Spinach mushroom salad Cook bacon in a skillet until crisp; remove to paper towelling to drain;
crumble and reserve. Measure bacon fat; return 2 tablespoons to skillet.
Stir in sugar, vinegar, water, and salt. Keep warm.
Wash and remove stems from spinach; dry thoroughl Cheesy spinach Clean spinach leaves well, remove stems and chop leaves and stems
separately. In wok or skillet, saute stems, onion and garlic until onions
are translucent. Stir in cooked rice. Lay spinach leaves on top of rice
