Skillet Zucchini Combo



Ingredients:
3 medium Ears corn
1 medium Onion; quartered, sliced
1 Red bell pepper
1 Clove garlic; minced
2 Tablespoon(s) Vegetable oil
3 medium Zucchini; sliced
1 large Tomato; peeled, chopped
2 Jalapeno peppers; seeded
1/2 Teaspoon(s) Dried basil
1/2 Teaspoon(s) Italian seasoning
1/2 Teaspoon(s) Salt
1/4 Cup(s) Freshly grated parmesan
Directions: Cut corn kernels from cobs and set aside. Saute onion, bell pepper and garlic in oil in a large skillet 5 minutes. Add zucchini; cook, stiring often for 7 minutes. Add corn, tomato and next 4 ingredients; cover and cook over low heat, stirring often, 7 minutes. Sprinkle with Parmesan and serve immediately.
