Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking then cook scallops, turning over once, until browned well and just cooked through, 5-7 minutes total. Tran Szechuan bean curd(tofu) Place ground beef, green onions, & garlic in a nonstick skillet and
cook, stirring quickly, until beef is browned. Stir in chicken broth,
soy sauce, oils, and red pepper flakes. Mix the cornstarch with the
cold water. Add to the skillet. Cook Hot sesame seed beef Mix together all of the marinade ingredients. Slice the beef across
the grain into thin, diagonal pieces (about the size of your smallest
finger). Marinate for about half an hour.
Heat the wok until a drop of water dropped into it dances around a Snap peas with sesame oil CUT ACROSS THE STEM END of the peas and pull off the string that runs
along the length of the pea. Bring a pot of water to a boil, add salt
and the peas. Blanch until the peas turn bright green and are
tender-crisp, after a minute or so. Taste to Tofu in black bean sauce In a wok, heat oil until nearly smoking.
Add garlic and ginger, and stir-fry rapidly over high heat for 1
minute.
Add black beans, and stir for 30 seconds. Add onions, and stir for
2-3 minutes.

2. Combine flour, coriander, cardamom and garlic in a bowl, add
water, stir until smooth.
3. Heat oil in a pan. Dip tofu slices into spice mixture, coat
thickly.

Prick holes in the pie crust dough all over the bottom and sides of the
