Sesame Soba Salad



Ingredients:
1 9 oz package soba noodles
6 scallions; sliced
1 1/2 Cup(s) mung bean sprouts
6 radishes; sliced
1/16 Cup(s) tahini
2 Tablespoon(s) soy sauce
2 Tablespoon(s) mirin
1/2 Tablespoon(s) rice vinegar
1 1/2 Tablespoon(s) sesame oil
1/16 Teaspoon(s) cayenne
1 Teaspoon(s) sesame seeds; for garnish
Directions: Cook the noodles, breaking in half. Toss the noodles with the scallions, bean sprouts and radishes. Place the tahini, soy sauce, mirin, vinegar, sesame oil, and cayenne pepper in blender and process until smooth. If the dressing is sticky, add a T or 2 of water. Pour the dressing over the salad.
