Ingredients: 1/16 Cup(s) honey 3 Tablespoon(s) sherry vinegar 1 salt and pepper 4 Tablespoon(s) olive oil 1/2 Cup(s) red onion; finely chopped 1 Tablespoon(s) garlic; minced 1/3 Cup(s) green olives; cut into 1/4 in rounds 1 naval orange; 1/2 inch cubes 4 Tablespoon(s) parsley; chopped 1 sirloin steak (or flank?); about 1 1/2 pounds |
Directions: Whisk together honey and vinegar in a medium bowl; season with salt and
pepper. Whisking constantly, pour in oil in a slow, steady stream; whisk
until emulsified. Stir in onion, garlic, olives, orange, and parsley; set
aside.
Season steak all over with 1 tsp salt and 1/2 tsp pepper. Coat a 12-inch
seasoned cast-iron skillet with a thin layer of oil; heat over medium-high
heat until very hot. Sear steak, turning once, 6-8 miutes per side for
medium rare. Transfer to a plate, and tent with foil; let stand 10 minutes
before slicing.
To serve, cut steak against the grain into 1/4 inch thick slices, and
arrange on a platter. Spoon relish on top; garnish with parsley sprigs.

Mix vegetables and salt. Cover and let stand 12 to 18 hours. Drain
vegetables and rinse. Mix vegetables and remaining ingredients. Seared fish steaks with horseradish butter Steaks:
1. Set a heavy-bottomed 12-inch skillet over low heat for 5 to 10 minutes,
or medium heat for 3 to 4 minutes, while preparing the meal and seasoning
the fish steaks. Three to four minutes before searing the fish steaks, turn
on the exhaust fan and Cucumber-mint relish In a small bowl, combine yogurt, cucumber, mint and salt. Mix well.
Barbecued cube steak Flour and season steak and brown in fat. Add chopped onion, brown lightly.
Mix ingredients, pour over steak. Cover slightly. Cook slowly 35 minutes,

Lemon pickle relish Salt the lemon wedges on all sides and pack into a quart jar.
Cover the jar and let stand for 4 to 5 days at room temperature.
Add the garlic and pepper, mixing them through the lemons.
Heat the oil in a saucepan until very hot and pour it over lemons.
Le Marinade for steak "... Ingredients in a marinade can be varied, but it is important to use
wine, vinegar, lemon juice, or some acidic liquid to break down the
connective tissues. This process will make the steak more tender.
