Directions: In a 7-inch pie plate combine ham, green onion, butter or margarine and
basil. Micro-cook, uncovered, on 100% of power for 1 to 1 1/2 minutes or
till the mixture is heated through. Meanwhile, stir together beaten eggs
and milk. Pour over ham mixture in pie plate. Micro-cook, uncovered, on
50% of power for 4 to 5 minutes or till eggs are nearly set, pushing
cooked portions to center of dish several times during cooking. Sprinkle
with cheese. Micro-cook, uncovered, on 100% power for 30 seconds to 1
minute more or till cheese is just melted.

Devilishly delicious eggs Peel and cut eggs in half lengthwise. Mash the yolks and mix with Pace,
bacon, and mayonnaise. Fill the egg whites with the yolk mixture and chill.
Garnish with olive slices or small sprigs or parsley or cilantro and serve
on a lettuce-lined tray.
Scrambled eggs with cactus * Use 1 8-oz can of Nopalitos (cactus pieces) that have been
drained
and rinsed. In a 10-inch skillet, cook cactus pieces and onion
in the margarine until the onion is tender but not brown. In a bowl,

Bobbie's note: I use a fork to mash t Eggs portugal In a 9x13 greased caserole dish, place bread cubes. Brown sausage into very
fine pieces, drain. Top bread with cheese. Place sausage on top of cheese
and bread Mix eggs and milk together and pour on top of the sausage, bread
and cheese. Cover and Bayd bi banadoura (eggs with tomatoes) Wash, peel and quarter the tomatoes. Stew gently until soft in
covered pan with several tablespoons of water. Pour into baking dish
or skillet. Beat eggs well and season. Pour over tomatoes. Cook over
low flame without stirring until eggs are s Scrambled eggs with zucchini * There should be 2 oz of shredded cheese. In a medium skillet,
cook the zucchini in the margarine for about 4 to 5 minutes or until
almost tender. In a bowl, beat the eggs, milk, chile powder, salt and
pepper with a fork. Stir in half of th Turkey salad stuffed eggs 1>
. Place eggs with enough water to cover in medium-sized saucepan. Bring
to boil; reduce heat to simmer for 10 minutes. Drain; hold under cold
