Directions: In a medium bowl crack the eggs and beat with the milk, salt, and pepper.
In a pan over medium heat saute the g
arlic scapes until they become fragrant, about 1 minute. Before the scapes lose their color or texture add the egg mixture.
Stir the mixture constantly until cooked egg begins to pull away from the bottom of the pan. Add the mozzarella cubes and continue to cook and stir, gently pulling the cooked egg off the bottom and the pan and allowing the raw egg to replace it.
When all the egg has become solid, but still looks slightly wet, remove it from the pan and plate it. The eggs will continue to cook on the plate and may become overdone if allowed to cook in the pan until all the wetness is gone.
Serve immediately with a garnish of fresh garlic scapes.

Steamed trout with ginger and garlic First of all, rinse the trout and dry it with kitchen paper, then sprinkle the outside of the fish with salt and leave aside for half an hour to help firm up the flesh. Meanwhile, place all the sauce ingredients in a small saucepan, then bring them up to Brunch eggs #3 Brown and drain sausage. Mix together eggs, milk, dry mustard and salt.
Stir in cubed bread. Add cheddar cheese and sausage. Pour into greased
