Ingredients:
1/2 salt
1/5 ground pepper
1 olive oil
Directions: In a medium bowl crack the eggs and beat with the milk, salt, and pepper. In a pan over medium heat saute the g arlic scapes until they become fragrant, about 1 minute. Before the scapes lose their color or texture add the egg mixture. Stir the mixture constantly until cooked egg begins to pull away from the bottom of the pan. Add the mozzarella cubes and continue to cook and stir, gently pulling the cooked egg off the bottom and the pan and allowing the raw egg to replace it. When all the egg has become solid, but still looks slightly wet, remove it from the pan and plate it. The eggs will continue to cook on the plate and may become overdone if allowed to cook in the pan until all the wetness is gone. Serve immediately with a garnish of fresh garlic scapes.
